published each semes-
ter by Dr. Larry Long,
vice president for aca-
demic affairs, honor-
ing those who have
achieved high schol-
arship. To be eligible,
rying 12 or more hours
with a 3.65 or higher
grade point average
and no incompletes.
Harding had a record
enrollment this year
of more than 6,600
students from all 50
states and 49 foreign
countries. It is the
largest private univer-
sity in Arkansas and
attracts more National
Merit Scholars than
any other private uni-
state.
Harding also main-
tains campuses in
Australia, Chile,
England, Frances,
Greece, Italy and
Zambia.
Two local residents named
to WTAMU honor list

West Texas A&M University has

Valentine's Day is a
time to indulge. Candy
and cakes are certainly
par for the course.
If you desire something
that strays from the tra
ditional chocolate and
strawberries, consider an
easy recipe for homem ade
cream puffs. These light
but decadent confections
are sure to please.
Vary the recipe depend -
ing upon your personal
tastes, including dipping
the puffs in chocolate, or
topping them with cherry
pie filling. The options
are endless.
Easy Cream Puffs
Yield: 20 to 25 puffs
The secret is using
instant pudding mix to
create a simple cream
filling. Avoid opening the
oven door while puffs are
baking to prevent them
from deflating.
For the puff shells:
1 cup water
1/2 cup butter
1 cup all-purpose flour
4 eggs
1/4 teaspoon salt
For the filling:
2 (3.5 ounce) packages
instant vanilla pudding
(choose chocolate pud-
ding if you prefer a choc-
olate filling)
2 cups heavy cream
1 cup milk
1. Preheat oven to 425
F.
2. Mix filling ingre-
dients in a bowl. Cover
with plastic wrap and put
in the refrigerator to set
up.
3. In a large pot on
the stove top, bring water
and butter to a boil.
4. Stir in the flour
and salt until the dough
forms a ball. Remove the
pot from heat.
5. Stir in one egg at a
time until all the eggs are
incorporated.
6. Drop tablespoons
of the batter onto an
ungreased cookie sheet
(or larger balls if you
desire larger cream
puffs); place in oven.
7. Bake for 20 to 25
minutes, or until cen-
ters of the puff shells are
dry and the outsides are
golden brown.
8. When the shells are
cool, cut in half and fill,
or use a pastry bag to
pipe in the filling.
9. Dust with powdered
sugar to serve, drizzle
with chocolate, or use
your topping of choice.

The Texas Commission on Environmental Quality (TCEQ) has no-
tified the City of Roscoe water system that the drinking water be-
ing supplied to customers has exceeded the Maximum Contaminant
Level (MCL) for NITRATE. The U.S. Environmental Protection
Agency (U.S. EPA) has established the CCL for NITRATE at 10
mg/1, and has determined that it is a health concern at levels above
MCL. Analysis of drinking water in your community for NITRATE
indicates a level of 13 mg/1. This violation oceured in the 4th quar-
ter of 2009. Infants below the age of six months who drink water
containing nitrate in excess of the MCL could be seriously ill and,
if untreated, may die. Symptoms include shortness of breath and
blue baby syndrome. If your child is under the age of six months,
the child must be given an alternative water supply for any con-
sumption. Boiling the water is not an effective treatment for nitrate
removal.
Most consumers do not need to use an alternative water supply.
However, if you have health concerns, you may want to talk to your
doctor to get more information about how this may affect you. At
this time, the health effects to fetuses of pregnant women are un-
clear. If you are pregnant, you may also choose to use an alternative
native source of water for drinking and cooking purposes.
We are working to correct the problem by:
1). The city has drilled a new water well that has been verified as
being below the MCL of 10 mg/1. This well is in use.
2). The City has constructed a new ground storage tank.
3). The City is providing (at no additional cost) water for pregnant
women and infants.
Please share this information with all other people who drink this
water, especially those who may not have received this notice di-
rectly (for example, people in apartments, nursing homes, schools
and businesses). You can do this by posting this notice in a public
place or distributing copies by hand or mail.

in the chest, shoulders,
arm or even jaw, Afshar
said. Symptoms can also
include palpitations, light-
headedness or fatigue
because of lack of oxygen
being pumped throughout
the body.
Sometimes these symp-
toms can be caused by
something unrelated to
the heart, like a pulled
muscle, but if you have
cardiac risk factors and
experience any of the wide
range of symptoms, it is a
sign that you need to see
a doctor.
Cardiac risk factors
include family history of
heart disease, high choles-
terol, high blood pressure,
obesity, diabetes, high
triglyceride levels and
smoking. Treating and
recognizing symptoms
early is important and can
help prevent a major car-
diac event.
