29Departmental Requirements for Food, Nutrition,
and Dietetics
The scope of Food, Nutrition and Dietetics is broad. A
strong aptitude for chemistry and the biological sciences are
necessary for completion of this degree. In defining the
nutrition goals for the nation, the American Dietetic
Association (ADA) recommended that "virtually all routine
health contacts with health professionals should include
some elements of nutrition education and nutrition
counseling."
According to the Department of Labor Statisics, the
dietetics profession will grow above all averages of other
professions through the year 2000. Dietitians and
nutritionalists are employed in health care (acute care
hospitals, medical centers, and nursing homes); others work
in commercial business and industry, school feeding,
community and public health nutrition programs; wellness
centers, day-care centers; or are self-employed in private
practice. They also find career opportunities in food science,
education, marketing, and product development, as well as
research.
This General Dietetics program is currently granted
approval status by the American Dietetic Association
Council on Education Division of Education
Accreditation/Approval, a specialized body recognized by
the Council on Post-secondary Accreditation and the
United States Department of Education.
Graduates of this program who are verified by the program
director may apply for dietetic internships or preprofessional
practice programs to establish eligibility for active membership
in the American Dietetic Association and/or to write
the registration examination to become a Registered
Dietitian. In order to be competitive for AP4 programs or
Dietetic Internships a student should have a minimum GPA
of 3.0 in nutrition, food science and food service management
courses, a minimum of 2.75 in science courses(chemistry, physiology, and microbiology), and a minimum
overall GPA of 2.7. A student not completing HEFS 221 or
222 in a college or university within the United States must
complete these courses at ACU.
Graduate degrees are desirable for advancement in many
areas of this field. Employment opportunities are
encouraging.
Departmental Requirements for the BS in Food, Nutrition,
and Dietetics are as follows:
1. Required courses in Home Economics/Family Studies,
37 hrs.: HEFS 401, 222, 225, 323, 324, 325, 328,
425,426,427,428, 251,454 (1).2. Required courses in Science, 20 hrs.: BIOL 292, 353;
and CHEM 111, 112, 113, 114, and 243.
3. Other required courses, 22 hrs.: ART 101; POLS 225
or 226; PSYC 311, 391; and SOCI 415 (These fulfill
General Education requirements); CS 105; HRM 332.
4. Electives, 5 hrs.

Economics
A degree in General Home Economics provides an excellent
background for many entry-level positions in business and
industry, full-time homemaking, or graduate work in home
economics/family studies. General Home Economics
majors who select their electives carefully enhance their
opportunities for these jobs. Consult your adviser for
recommended elective concentrations in art, business, mass
communications, government, human development/family
studies, and journalism. Graduates in General Home
Economics are often employed in positions calling only for
unspecified college degrees. This degree does not meet
teacher certification requirements for any field.
