It ia time to clean out the B-B-Que pit or the gas grill and eqjoy these
beautiful, sunny days. I tried this recipe for comish game hens last
week-end and it was delightful. Remember to baste the hens frequently
with the sauce mixture to keep them moist.
GRILLED CORNISH HENS
two 1 l/2-to-2 pound Rock Cornish hens
Olive oil
1/3 cup red wine vinegar
1/3 cup packed light brown sugar
1/4 cup orange juice
3 tablespoons soy sauce
1/2 tap. garlic salt
Remove giblets and necks from inaide hens. Rinse hena in cold water
and pat dry with paper towels. Cut the hens in half and rub with olive
oil. ’
Mix red wine vinegar, brown sugar, orange juice, soy sauce, garlic
salt, and 1 TBL. olive oil.
Baste hena with sauce and place on grill over low to medium heat for
35 minutes or until hens or tender, basting frequently with the sauce
mixture and turning the hens often.
Serve with wild rice or a pasta salad. Delicious.
A nice note from Chrissy Osmun ( Ellis) of Llbertyville .Illinois saying
she looks forward to “Sally’s Corner” every week and “ I enjoyed the time
Dick filled in one week”. Also how much fun to get everyone’s favorite
recipes.
Notes like Chrissy’s are one of the reasons I eqjoy writing this column.
It ia so nice to share your recipes with folks so far from home. So please,
keep sending me those wonderful recipes.
