Colquhouns Return
From Lengthy Trip
You know, if the price of a
loaf of bread keeps rising, and I
hear it will, we are going to
have to learn to bake our own,
or substitute homemade
biscuits or cornbread. That is,
if we can afford the flour,
shortening, etc. Anyway I tried
a new biscuit recipe last week
and it wasn’t any good, so I’ll
share some with you from the
Old San Patricio Cookbook. •
PETE’S BUTTERMILK
BISCUITS
Georgie Schmidt
Mathis, Texas
4 cups flour
1 t. soda
4 t. baking powder
1 t. salt
IV2 cups buttermilk
4 T. shortening
Mix dry ingredients, cut in
shortening. Add warm
buttermilk. Mix real soft, roll
out and cut with biscuit cutter.
Place in pan and let dough rise
for 15 minutes before baking.
Bake at 350 deg. until good and
brown.
OLD TIME
BISCUITS
H. C. Morton
San Patricio, Texas
2 cups flour
3 t. baking powder
1 t. salt
2 T. shortening
V2 t. soda
% cup sour milk or
buttermilk
Sift flour, baking powder and
salt together. Rub in
shortening with fingertips. Mix
soda and sour milk. Adel slowly
to first mixture and mis: to soft
dough. Roll out on slightly
floured board to l inch
thickness. Cut to 3 inch
diameter. Brush so that both
sides and edge are lightly
coated with hot bacon grease.
Bake in preheated oven at 450
degrees about 17 minutes.
Makes six biscuits. Instead of
cutting biscuits, I prefer to roll
into a ball the amount needed
for each, then roll in hot grease
and flatten to desired thickness
and place on ungreased cookie
sheet.
JELLY CORN
MUFFINS
Erma Jackson
Corpus Christi, Texas
1 cup cornmeal
1 cup flour
V2 t. salt
4 t. baking powder
1 cup milk
1 egg
2 T. shortening
Sift cornmeal, flour, salt and
baking powder. Add milk
slowly and add well-beaten egg
and melted shortening. Fill
greased muffin tins y4 full. Put
a spoonful of jelly on top of
batter in each cup. Cover jelly
with more batter and bake in
400 degree oven until done.
SPIDER CORN CAKE
Mrs. Ben Bluntzer
San Patricio, Texas
IV2 cups cornmeal
V2 cup flour
V4 cup sugar
¥2 t. salt
1 cup buttermilk
1 t. soda
2 eggs, beaten
2 T. butter
1 cup sweet milk
Sift together cornmeal, flour,
sugar and salt into mixing
bowl. Then add buttermilk
mixed with soda. Stir in eggs
and 1 cup milk. Heat iron
spider skillet on top of stove
until hot. Melt butter in skillet
and pour in batter. Pour in 1
cup sweet milk on top and bake
in oven at 350 degrees for 50
minutes. Cut in pie shaped
pieces. Good! This recipe is
from the files of Kate Mahoney
Bluntzer and is now a family
tradition and favorite in the
home of Ben Bluntzer.
HOT WATER
CORNBREAD
Cleo Fulton
San Patricio, Texas
Have water boiling and put 2
cups cornmeal, 1 teaspoon salt
in a pan and pour enough water
to stir, adding water until the
Mr. and Mrs. Harry
Colquhoun Jr. and family
returned Friday from an
enjoyable three week vacation
in which they toured anc
camped throughout the
Southeastern United States.
The Odem family began the
lj first leg of their journey by
driving to Memphis,
Tennessee, where they visited
in the home of his sister, Mr.
and Mrs. Charles Zajicek.
After a brief two day sojourn at
the Zajicek home, they went to
Huntsville, Alabama. The
group really got a thrill out of
touring the NASA space center
and the space museum, where
they saw the space shuttle and
other interesting space items.
The family next stopped in
Chatanooga, Tennessee, where
the children were thrilled to
ride a trolley, and saw the
largest model train layout
(HO). The family also toured
Rock City during their stop in
Chatanooga.
Through the Smoky
Mountains and the Blue Ridge
Parkway Drive the Odem
family journeyed on to their
next stop, Charlotte, North
Carolina. There they enjoyed
four days of camping at the
Fort Heritage campgrounds.
During their stay, the
Colquhouns toured the local
studio and viewed the
telvisiong of the PTO Club
program.
Again on the road, this time
to Savannah, Georgia, the
Odem travellers stayed two
nights on Hunting Island and
swam in the Atlantic Ocean.
In other sightseeing tours,
the family went aboard the
Battleship Alabama, during
their stay in Mobile; and rode
an AMTRAK train to New
Orleans from the Jelly Stone
Campgrounds in Hammond,
Louisiana, where they left their
car and camper. In New
Orleans, they rode a trolley
down St. Charles and Canal
Streets, while they toured the
lovely city.
The last leg of their journey
was to Houston, where they
visited in the home of his other
sister, Mr. and Mrs. Robert
Killough. After staying
overnight, the Colquhouns
headed for home after a
wonderful trip.

course, you have all heard by
now that if the Hurricane
Center had left well enough
alone we wouldn’t have had
this trouble. First put a frisky
little ole gal in the Gulf, and
here come two men chasing
her. Did you notice that when
she hid in along the Texas coast
that David kinda gave up? Sure
hope old Fred doesn’t find
anything to chase out there. We
aren’t out of the woods yet. And

saving money. She actually
said she got the kids toys,
clothes, shoes, beach balls,
bathing suits, toys and other
goodies with coupons. That
sounds too good to be true—but
she has had it verified. I just
wondered what the family does
about meat
She also said she never,
never bought anything but

also advises not buying
anything you don’t need just
because you have^the coupon.

Mrs.

in sad shape.
The devastation hurricanes
leave in their path are terrible
and we wish them on no one. I
read in the big daily that some
young people were laying by in
store a good liquor supply and
planning to dance out the
storm in “a carnival
atmosphere.” Surely do hope
they were not hurt. That kind of
first hand experience can be
deadly.
I promised to leave Gov.
Clements alone, but would just
like to say that he picked a very
good time to take his Soviet
Bloc jaunt.

Read in a national news
magazine the other day that we
are in a recession. Somehow I
already knew that. I figured
that out when I bought school
clothes and food and gasoline.
I’m. kinda sharp that way.
The article I read was about
a lady who clips coupons and
does her entire shopping with
them. She spends about 5 hours
a week (I think it was a week,
may have been a day) clipping
coupons from papers,
magazines at home in the
doctor and dentist offices. The
newspapers offer the coupons
and so do magazines. Some
,come in the mail. I have saved
and used them for years. One
time I shaved more than $4 off
our weekly grocery bill with
coupons and returnable bottles
alone.
This lady 1 was talking about
sirloin; or 20 cents off celery,
1£ cents off potatoes, 10 cents
off oranges and etc., etc., I
might believe that lady can
save all that money and still,
live a normal relatively happy
life.
I took a chapter from her
book Saturday and saved a
little. These days a little is a lot
in the grocery store as you well
know. It will be a long time
before I’m a confirmed fanatic
coupon’ clipper. Like you, I’m
one of those who will buy.

Now that school has started
let’s all be extra careful at ALL
school zones. Watch for the
little ones and the big ones.
Watch for the little, tiny
pedestrians who are entering
kindergarten for the first time
and watch for the senior in his
newly-purchased auto.
Remember the speed limits
at school zones. Let’s have no
more tragedy because of
wrecks and children being run
over be cars.
