Fried Chicken Made Easy-
Yolanda Scrivner Tells How
Favorite relatives arrive
unexpectedly and you know
they are fried chicken
fanciers. But, traditional
fried chicken for a crowd is a
bother. There's the quantity
of oil, the heavy skillet, the
constant turning of just a few
pieces at a time, the mess,
the splatter and, of course,
the inevitable cleanup,
comments Yolanda Scriv-
ner, county agent with the
Texas Agricultural Ex-
tension Service, Texas A&M
University System.
Now theres' a new way to
prepare chicken that cuts
work to a minimum and
double batches can be
prepared and fried, "oven
fry". Several commercial
mixes are available whether
you prefer the home style
flour recipe or the crispy
crumb recipe.
Oven fried chicken ac-
tually fries chicken in the
oven, using a small amount
of oil. This oven method of
preparation has distinct
advantages over the
traditional skillet method -
less turning, less time and
less splatter. However, the

more controllable if the right
size pan is used. Package
directions call for a 15x10-
inch jelly roll pan. Not to be
confused with a cookie sheet,
the jelly roll pan has sides 1
inch high all the way
around which prevent any oil
from spilling out and allow
maximum control over the
degree and evenness of
browning.
Correct cookware is as
important to the success of
any dish as the ingredients
themselves. The wrong pan
can reduce a beautiful roast
to a shriveled mess. Once
the chicken is ready for the
oven, most of the work is
over. At the halfway cooking
mark, exchange positions of
pans from top to bottom,
after turning individual
pieces of chicken. When
frying time is completed,
remove top pan from oven,
move bottom pan to top rack
and allow to brown for a few
minutes to ensure crispness.
Crisp outside - moist inside.

daughter, Emma Joy, to Enrique Gomez, Jr., son of
Enrique Gomez, Sr. of Camargo, Tamps. The couple
will exchange vows at 9:00 a.m. on Sunday, July 15, in
Templo Bautista El Buen Pastor in Rio Grande City.

JULY WEDDING PLANNED- Mr and Mrs. Ignacio Villarreal of Delmita an-
nounce the engagement and approaching marriage of their daughter, Thelma, to
Juan Garza, son of Rafael Garza and the late Remijia Garza of Pharr. The couple
have set July 7 as Iheir wedding date. They will exchange vows at 5:00 p.m. at St.
Margaret Catholic Church in Pharr. The bride-elect is a 1978 graduate of San Isidro
High School and is currently attending Pan American University. Her fiance, a 1976
graduate of Pharr-San Juan-AlamoHigh School, attended Florida Bible College and is
presently employed by Montgomery Ward.

BAND MASCOT CONTESTANT- Noelia Noemi
Salmon is a new contestant in the Rattler Band Mascot
contest. Participants in the competition may still
register by calling Mrs. Alberto Barrera at 487-2757.
The winner will be named at the Western Dance
sponsored by the RGC' Band Boosters on Friday, July
6, at the K.C. Hall. Noelia Noemi is the daughter of Mr.
and Mrs. Noe Lazaro Salmon III and is being co-
sponsored by the American GI Forum.

A friend, Ann Weems, wrote this poem which
should remind us all to cherish the seemingly
small and everyday occurences in our life and
hold them dear: She entitled it "To You," and it is
a toast. "This morning I was toasted by a twc-
year-old who raised her juice glass to mine and
said, 'To you!' She brought the morning; she
moved a mountain; She brought flowers out of
barren land and sunlight from darkness. What a
way to start the day-affirmed and celebrated.
Remember to celebrate those across the table.
When did you last tell them they are precious?
You told them to take out the trash, to make their
beds. But did yim tell them they were cherished?
You told them Chey were wrong; you told them to
hurry up. But'did you tell them they were
beautiful? We celebrate events or days or heroes,
But take for granted the joy of the familiar. So
here's to you, familiar faces at my breakfast
table! Here's to smiles, sleepy kisses, and
theological questions at dawn; Here's to un-
brushed teeth, unmade beds, and unpicked up
clothes; Here's to dirty tennis shoes with one blue
sock and one brown; Here's to last night scores
and news told before I read it; Here's to feeding
the bird; walking the dog, drumming the drums,
Phoning the friends, giggling, and kissing good-
bye. Here's to my cold cup of coffee, to the lunch
forgotten; Here's to the little girl who wants ice

1954 graduates of Rio Grande City High School,
here's to you! A reunion of the RGC class of 1954 is
being planned for Saturday, July 14. Festivities
will begin at 8:00 p.m. at the Brass Bull. There will
be dinner and music and "Road to Rio" is the
theme. A mass is scheduled for 7:00 p.m. at the
Immaculate Conception Church.
An Open Installation of officers has been
scheduled by the AF and AM Masonic Lodge in
Rio Grande City. The public is invited to attend the
installation of new officers on Friday, June 29, at
8:00 p.m. at the Lodge Hall on West Main Street.
Refreshments will be served.
One more week until the Fourth of July and the
big post-holiday festivities scheduled. The Rio
Grande City Band Boosters have set a Western
Dance for Friday, July 6, from 8 to 12 at the K.C.
Hall; a parade at 10:00 a.m. and Olympic games at
1:00 on Saturday; and a rodeo on Sunday at La
Posta Arena. The new Rattler Band Mascot will be
named at th'j dance Friday, and the winner of the
money doll raffle will also be announced there
Anyone wishing to enter the Mascot contest may
call Mrs. Alberto Barrera at 487-2757. Other new-
band booster officers are Mrs. Benecio Barrera,
Mrs. Cesar Leal, Alfredo Garcia, and Mrs. Noe J.
Ixipez. Call them for information on any of the
scheduled activities.
Don't forget the Firemen's Barbecue on Sunday.
$2.50 buys a plate of food including a half a
chicken. Plates may be picked up from 11:30 a.m.
until 2:30 p.m. at the station. Call the station this
week to reserve your plates.
