theory and processes of cooking; the study of recipes as to types;
the principles and practice of canning and preserving; jelly and
pickle making. Further work in the cost and nutritive value of
foods, the planning of menus to meet physiological needs; the
cooking and serving of meals. Lecture and recitation, one hour
per week; laboratory, four hours. Parallel or prerequisite bacteriology,

223. Foods-Dietitics Continuation. This course treats of
the composition of foods and the amount required for proper
nutrition. Practice in the weighing and measuring of one hundred
calorie portions will be given. The energy requirement for the
individual at different ages will be studied. Lecture and recitation,
one hour a week; laboratory, four hours a week. Prerequisite,
233.-Foods-Invalid Cookery. This course includes the
fundamental principles of nutrition with special emphasis on the
food requirement and the preparation of food for persons under
abnormal conditions. Lecture and recitation, one hour a week;
laboratory four hours. Prerequisite, Foods 223.
243.-Home Management. This includes a study of the problems
confronting the housewife in her every day life; the organization
of the household, sanitation, food problem, and problems
of expenditure. Lecture and recitation three hours a week.
253.-Home Nursing. The aim of this course is to give the
student a comprehensive knowledge of the prevention and care
of communicable diseases in the home. Lessons in first aid
will be given. Lecture and recitation three hours a week.
