ECONOMICAL DISHES

are always looking for recipes that
are good without being too expensive of
time and material.
Economy Spice Cake.
81ft two cupfuls of bread flour witS
two tablespoonfuls of cornstarch and
live teaspoonfuls of baking powder.
Boll one capful of sugar with one and
one-half cupfuls of water, one-fourth
cupful of cooking oil, one teaspoonfnl
each of cinnamon, nutmeg, and salt
and one cupful of raisins together, two
mlnntes. Cool and add the flour and
when well blended, poor into a floured
pan to bake in a moderate oven for
45 minutes. Cover while hot with the
following topping: the Juice of one
orange, a little of the rind If desired
and one-fourth cupful of sugar well
mixed. This mixture soaks in the
cake leaving a light glazing top and
adds greatly to the flavor of the cake.
Tills may be used with any plain cake.
Apple Sauce C«ke.
Mix and sift two cup.ols of flour
with one tea»|MM.nful of soda, one tea-
spoonful of cinnamon and one-fourth
teaspoonful of clove*. Slice one-half
package of dates and mix the dry In-
gredlenta with a fork. Cream one-half
enpfnl of shortening, add one cnpfnl
Of sugar gradually with one beaten
egg. Add the dry Ingredients alter-
nately with one cupful of hot strained
apple sauce. Season with one-half tea-
spoonful of salt, mix well and bake In
n shallow pan 40 minutes.
Corned Beef Hath.
Take two cupfuls of cooked corned
beef, two cupfuls of cooked potatoes,
nil chopped, two onions chopped, salt
and pepper to sei • n, one-half cupful
of milk and two tahlespoonfnls of
vegetable OIL Bake In a well oiled
pan In a hot oven for 20 mlnntes, or
cook In n well oiled frying pan until
brown on the bottom, then fold like
an omelet
Quick PI* Crust
Sift two cupfuls of flour, add on*
teaspoonful of salt one-fourth tea-
spoonful of baking powder; add one-
half cupful of vegetable oil, stir In
with a fork Ughtly, then add four
tablespoonfuls of water, very cold,
turn out on a floured board and roll
out half at a time.
New Appl* Pie.
Wash, core and slice new apples;
mix one-half teaspoonfnl of cinnamon,
one-fonrth tea spoonful of salt, ona
feaspoonful of cornstarch and two
tablespoonfuls of sugar. Line a pie
pan with quick pie crust and sprinkle
with the sugar and spice, add the
apples ami cover with a half cupful
or more of sugar. Dot with butter,
using a tablespoonful, and cover with
the tinper crust. Bake in a hot oven
for ten minuted, then lower the beat
In adding sugar to any fruit pie, espe-
cially apple, sprinkle the sugar in al-
ternately with layers of apple to In-
sure an even sweetening.
