Home Recipes
If yon didn't bake a fruit cake last
month, try one of these. Any of these
cakes will keep nicely for several
days and all of them are easy on
Holiday Cake
Boil the following: ingredient* to-
gether for 3 minutes:
2 cups water or fruit juice
2 cups brown sugar
4 cups raisins or a mixture of
fruits
2 teaspoons cinnamon
1 teaspoon cloves
1 teaspoon nutmeg
2-3 cup Crisco
Cool and add:
4 cups flour
1 teaspcon baking powder
2 teaspoons soda dissolved in S
teaspoons warm water
1 to lVa cups nuts ( Brazil nuts are
best)
1 teaspoon salt
Bake in one large tube pan or two
loaves in a slo wmoderate oven for
■one hour cr longer. Some candied
peel or citron may be used instead of
part of 'he raisins. Nuts may be
omitted if a less expensive cake is
desired. You may leave this cake
unieed or uce any caramel icing. The
following is a good one.
Praline-Brasil Nut Icing
2 cups sugar
*4 cup brown sugar
1 cup rich milk or cream
Pinch of salt
1 Tablespoon butter if milk is used
1 teaspcon vanilla
1 cup chopped Brazil nuts
Mix together sugars, milk or
cream, salt and butter if used. Cook
covered, over moderate heat until
boiling well. Uncover and cook with-
out stirring to soft ball stage." Cool
until bottom cf cooking pan is just
warm. Add vanilla and beat until
creamy. Sprinkle with nuts as soon
as it is spread on cooled cake. If
king becomes too hard while spread-

Here is a tasty version of an old
time favorite:
Applesauce Cake
1% cups appksauce
1 cup sugar
Vi cup butter
Hteaspoon salt
2 teaspeors soda
2 cups flour •
1 cup raisins
1 teaspoon cinnamon
1 cup nuts
1 teaspoon cloves
1 i easpoon allspice
Cream butter and sugar together,
mix dry ingredients and add alter-
nately with applesauce to creamed
mixture. Add nuts and raisins. Bake
in moderate oven until done.
Everyone has eaten pumpkin pie,
but have you tried pumpkin cake?
Pumpkin Cake
Vt cup shortening
1 1-4 cups sugar
2 eggs
2 cups flour
3 teaspeons baking powder
V% teaspoon salt
Vt teaspoon cinnamon
Vt teaspoon ginger
*4 teaspoon nutmeg
1 cup cooked pumpkin
3-4 cup sweet milk
Vi teaspoon soda
*4 cup chopped nuts
Cream the shortening and sugar.
Blend in the well beaten eggs. Mix
dry ingredients except soda. Add the
flour mixture and the pumpkin mix-
ture alternately to the creamed mix-
ture. Blend in the nuts last. Bake in
two well-greased and floured cake
pans in moderate oven for about 35
minutes. Ice with either cf the fol-
lowing icings:
Raisin Sour Cream Icing
1 cup granulated sugar
Vi cup sour cream
1-4 cup seeded raisins (cut in two)
Stir sugar and scur cream together.
Allow mixture to come slowly to
boiling point over low heat, keeping
pan covered first three minutes. Boil
slowly until icing will form soft ball
when dropped into cold water. Let
stand until cold. Ad draisins and
beat until thick enough to hold its
shape. Thin with a little sweet cream
if icing becomes too thkk to spread.
This amount will cover only the
sops of the layers. If you wish the
sides covered, double the recipe.
Raisin Brown Sugar Icing
1 large egg white
1 cup b,rown sugar
3 tablespoons water
1-4 cup raisins (cut in two)
Combine sugar, egg white and wa-(
ter in the top of a double boiler. Beat
enough to blend. Place over hot water
and beat vigorously with rotary egg
beater or electric beater for about
7 minutes or until mixture will hold
its shape. Remove from fire and care-
fully fold in the raisins. As the rai-
sins cause the icing to soften a little,
be sure k is beaten until it ia good
and thkk before adding them. Spread
cn cooled cake.
