Veal Cutlets and Vegetables
In choosing a cut of meat for veal cutlets, you should remember
that the whiteness of veal is considered a sign of good quality. Be
sure never to camouflage the delicate taste of veal with strongly
flavored vegetables.
BREADED VEAL CUTLETS
3 lbs. veal cutlets
1 cup flour
3 eggs
xh tsp. salt
breadcrumbs
XA tsp. garlic powder
margarine or oil for frying
In a paper bag put flour, salt
and garlic powder. Add 1 cutlet
at a time, close the bag and shake.
Combine eggs with salt and beat
well. Dip cutlets in eggs, then in
breadcrums or matzo meal. Re-
frigerate one-half hour before fry-
ing. Put waxed paper between
layers of cutlets. Brown on both

and water to cover. Cover pot
and boil over a low flame about
35 minutes.

LOS ANGELES (JTA) — A sur-
vey by the American Jewish Com-
mittee here indicated that there is
discrimination among major Los
Angeles corporations in the hir-
ing of Jews for top executive
posts and their election to board
membership. The results of the
survey were made public by Ar-
thur Greenberg, chairman of the
AJCommittee’s Los Angeles chap-
ter. It covered the hiring techni-
ques of 27 leading Los Angeles
companies. It found that while 10
percent of Los Angeles’ popula-
tion is Jewish, as are 20 percent
of its college students, only six
percent of the top corporation em-
ployees are Jewish. The figure is
51 out of 848 board members and
senior management personnel.
