I've been told there is a "Potato
Salad Cookbook" with recipes for
all kinds of different potato salads.
I've never seen this book, but I
know there are many, many differ-
ent kinds of potato salads-all of
them good, in my opinion.
Vicky Pennell of Kerrville is
sharing her recipe for "Vicky's Kil-
ler Potato Salad" with all of us this
week. Vicky says this rich, luscious
treat, actually with a flavor very
much like stuffed potatoes, is a fa-
vorite of her husband’s. He always
insists she make it whenever a cov-
ered-dish dinner comes along. It
makes quite a lot, and is great for
potlucks or when company is com-
ing for dinner.
Thanks, Vicky, for sharing.
Vicky's Killer Potato Salad
5 lb. bag of potatoes, boiled,
peeled, and diced
1 (16-oz.) carton sour cream
2 cups grated cheese
1 stick butter, melted
1 jar Bac-os
2 bunches green onions, chopped
1 (8-oz.) pkg. cream cheese, sof-
tened*
Salt and pepper to taste
Combine all ingredients in a
large bowl and stir well. Chill be-
fore serving.
*Vicky says you can double the
sour cream and skip the cream
cheese if you like, but the cream
cheese gives it more flavor.
If you have a favorite recipe
looking for a special recipe, I'd like
to hear from you. Just write to me,
