Wow! The potato salad with
cilantro was quite unique.
For this week (courtesy of
Recipe4Living.com) we will be
going to all the K and L states
and two special July 4th des-
serts.
Have a safe and fun-filled
holiday.
Kansas City Potato Soup
This potato soup will be at
the top of your list as one of
your favorites. It is so simple
and good. It’s always a big hit
at potlucks.
6-8 med. potatoes, diced
1 c. celery, diced
1 med. onion, diced
water
1 stick margarine (optional)
1 can evaporated milk
1 c. ham, chopped
6 slices cheese
salt and pepper to taste
Add celery, onion and pota-
toes to a pot. Cover with water
and boil until done. Do not
drain. Add margarine, evapo-
rated milk, ham, cheese, salt and
pepper. Stir and let simmer until
done.
Baked Kentucky Fried
Chicken
The homemade blend of spic-
es in this recipe cannot be beat
- even by the Colonel himself.
4 skinless, boneless chicken
breasts (pounded to 1/2-inch
thickness)
1 Tbsp. salt
1 c. flour
1 Tbsp. pepper
2 Tbsp. paprika
1/2 tsp. garlic salt
1-1/2 tsp. ground mustard
1-1/2 tsp. ground thyme
1-1/2 tsp. basil
1/2 tsp. oregano
1/2 Tbsp. ground ginger
1 egg, beaten
1/4 c. vegetable oil
Preheat oven to 350 degrees.
In shallow bowl, mix all dry
ingredients together. Heat large
skillet with vegetable oil. Dip
each chicken piece in egg then
into spice mixture; coat well.
Add to the skillet and brown on
both sides. Remove to baking
sheet. Bake for 25-30 minutes.
Louisiana Seafood Gumbo
This Cajun seafood gumbo
features lots of shellfish and a
little andouille sausage for a
more complex flavor.
1 c. vegetable oil
1-1/2 c. flour
2 c. chopped onions
1 c. chopped celery
1 c. chopped bell pepper
1/4 c. minced garlic
1/2 lb. sliced andouille sau-
sage
1 lb. claw crabmeat
3 qts. shellfish stock (chicken
stock or plain water can be sub-
stituted)
2 c. sliced green onions
1/2 c. parsley
Salt, to taste
Cayenne pepper, to taste
1 lb. (35 count) shrimp, peeled
and deveined
1 lb. jumbo lump crabmeat
2 dozen shucked oysters, liq-
uid reserved (I don’t do this
step; I add 2 cups cooked chick-
en instead)
2 cups sliced okra, optional
2 cans chopped tomatoes
undrained
Cooked rice, for serving
In a two-gallon stock pot, heat
oil over medium high heat. Once
oil is hot, add flour and using a
wire whisk, stir constantly until
brown roux is achieved. Do not
allow to scorch. Should black
specks appear in roux, discard
and begin again.
Once roux is golden brown,
add onions, celery, bell pepper
and garlic. Saute approximately
3 to 5 minutes, or until veg-
etables are wilted.
Add andouille, blend well
into vegetable mixture and saute
an additional 2 to 3 minutes.
Add claw crabmeat and stir into
roux, since this will begin to add
seafood flavor to the mixture.
Slowly add hot shellfish stock,
one ladle at a time, stirring con-
stantly until all is incorporated.
Bring to a low boil, reduce to
simmer and cook approximate-
ly 30 minutes. Add additional
stock if necessary to retain vol-
ume. Add tomatoes, okra, green
onions and parsley and season
to taste using salt and cayenne
pepper.
Fold shrimp, lump crabmeat,
oysters or chicken and reserved
liquid into soup. Return to a low
boil and cook approximately 5
minutes. Adjust seasonings and
serve over cooked rice.
Open-Face Peach Pie
1 store-bought pie crust
2 c. sliced peaches, fresh
2 Tbsp. flour
3/4 c. sugar
2 eggs beaten
3 Tbsp. cream or 1/2 & 1/2
Cinnamon
Fill unbaked pie shell with
sliced peaches. Mix flour, sugar
and eggs. Pour over peaches.
Pour cream over the top and
sprinkle with cinnamon. Bake at
350 degrees for 25 to 30 minutes
or until custard is set.
This pie freezes well. If using
a deep dish, use 1-1/2 times the
custard part and the full crust
recipe.
Texas Peach and
Blueberry Crisp
1 Tbsp. margarine
1 can peach pie filling (I also
add either one cup fresh or one
can of sliced peaches drained)
1 c. blueberries
1/2 c. flour
2/3 c. packed brown sugar
1-1/2 packets brown sugar &
cinnamon instant oatmeal
1/3 c. margarine (very cold)
3/4 tsp. ground cinnamon
3/4 tsp. ground nutmeg
Cool Whip or vanilla ice
cream
Preheat oven to 375 degrees.
Coat bottom and sides of pie
pan with margarine. In a small
bowl, mix pie filling, peaches
and blueberries. Pour into pie
pan.
In a medium bowl, mix brown
sugar, flour, oatmeal, margarine,
cinnamon and nutmeg with a
fork or pastry cutter or use your
hands. When mixture is crum-
bly, sprinkle over pie filling.
Bake for 30 minutes at 375
degrees, until topping is gold-
en brown. Serve warm with
whipped topping or ice cream.

Tommie and Peggy Clem
observed their Golden Anniver-
sary with a celebration dinner
on June 25 hosted by their chil-
dren.
The couple was wed 50 years
ago on June 24, 1961, at the First
Baptist Church of Point.
They have been blessed with
four children, Tim and wife
Melanie of Miller Grove; Tracy
and wife Sharon of Keller; and
Tommy Jr. and Tony, both now
deceased. They also have 15
grandchildren.
The Clems are now retired
and have lived in Miller Grove
for the past 50 years.
