apples, sweet potatoes and all
the good stuff of the season. Do

Pumpkin Whoopie Cookies
(kid friendly)
1 15.25-oz. spice cake mix
1/3 c. butter, softened
1 15-oz. can pumpkin
2 tsp. pumpkin pie spice
2 eggs
1/2 c. milk
1 16-oz. container cream
cheese frosting
Preheat oven to 350°. Line
a cookie sheet with parchment
paper or spray with cooking
spray.
In a large bowl, add the cake
mix, butter, pumpkin, pumpkin
pie spice, eggs and milk. Mix
slowly for 30 seconds or until
combined, then beat for 1-2
minutes. Batter will be on the
wet side.
Drop tablespoon-sized dol-
lops onto the cookie sheet - all
the same size.
Bake for 10-11 minutes. Let
cool completely.
Frost a cookie with a dollop
of cream cheese frosting and top
with another cookie. Store in an
airtight container and refrigerate
until ready to eat.
Spicy Pumpkin Bread
No-stick cooking spray
1-1/2 c. self-rising flour
1 c. sugar
1 tsp. ground cinnamon
1/2 tsp. ground cloves
2 large eggs, lightly beaten
1/2 c. vegetable oil
2 Tbsp. milk
1 c. canned pumpkin
1 c. chopped nuts
Heat oven to 350°. Spray bot-
tom of a 9x5-inch loaf pan with
no-stick cooking spray.
Combine flour, sugar and
spices in large bowl. Stir to
blend. Stir in eggs, oil, milk,
pumpkin and nuts until well
blended. Spoon into prepared
pan.
Bake 55-60 minutes or until
toothpick inserted in center
comes out clean. Cool in pan 10
minutes; remove from pan and
cool on wire rack.
Holy Trinity Apple Crisp
Topping:
1-1/2 c. old-fashioned oats
1 c. all-purpose flour
1/2 c. granulated sugar
2 Tbsp. brown sugar
1/2 tsp. salt
12 Tbsp. (1-1/2 sticks) cold
unsalted butter, cut into small
pieces
Filling:
2 Tbsp. brown sugar
1 Tbsp. all-purpose flour
1 tsp. cinnamon
1/2 tsp. salt
1/4 tsp. ground nutmeg
1/8 tsp. ground cloves
1/2 c. chopped nuts
4 lbs. apples (about 10),
peeled, cored and sliced (any
combination of Roma, Granny
Smith, Red or Golden Delicious,
Gala, Honey apples)
Preheat the oven to 400°.
To make the topping, com-
bine oats, flour, sugars and salt.
With a pastry blender or hands,
cut in butter until topping is
crumbly.
To make the filling, combine
brown sugar, flour, cinnamon,
salt, nutmeg and cloves in a
large mixing bowl. Add apple
slices and toss to coat. Spoon
into a 3-quart baking dish and
cover with topping. Bake about
50 minutes or until fruit bubbles
and topping is browned.
Chile-Potato Gratin
3 lbs. russet potatoes, peeled
and sliced 1/4-inch thick (Yukon
Gold, red or a mixture will
work)
2 chipotle peppers in adobo,
finely minced
2 c. chicken broth
1/4 tsp. salt
ground black pepper
2 c. grated Parmigiano Reg-
giano cheese
Preheat oven to 400°. Butter a
3-quart baking dish.
Place potatoes and chipot-
les in a large pan. Add chicken
broth, salt and pepper. Bring to
a boil, reduce heat and simmer
until almost fork tender, about
20 minutes.
Place one-third of potato mix-
ture into baking dish. Top with
one-third of cheese. Repeat lay-
ers twice, scraping any remain-
ing broth and bits of potatoes on
top. Cover with foil and place
on a large baking sheet to catch
drips. Bake 30 minutes. Remove
foil and bake 5 minutes, until
golden brown on top.
Chicken and Pasta Casserole
1 c. dry fusilli (corkscrew)
pasta
3 Tbsp. olive oil
6 chicken tenderloins, cut into
chunks (or turkey leftovers)
1 Tbsp. dried minced onion
Salt and pepper to taste
Garlic powder to taste
1 Tbsp. dried basil
1 Tbsp. dried parsley
1 10-3/4 oz. can condensed
cream of chicken soup
1 10-3/4 oz. can condensed
cream of mushroom soup
2 c. frozen mixed vegetables
1 c. dry bread crumbs
2 Tbsp. grated Parmesan
cheese
2 Tbsp. butter, melted
Preheat oven to 400°. Lightly
grease a medium baking dish.
Prepare pasta according to
directions, 8-10 minutes until al
dente, and drain. Heat the oil in
a skillet over medium heat.
Place chicken in the skillet,
and season with minced onion,
salt and pepper, garlic powder,
basil and parsley. Cook until
chicken juices run clear. Mix
in the cooked pasta, cream of
chicken soup, cream of mush-
room soup and mixed vegeta-
bles. Transfer to the prepared
baking dish.
In a small bowl, mix the bread
crumbs, Parmesan cheese and
butter. Spread evenly over the
casserole. Bake 30 minutes in
the preheated oven until bubbly
and lightly browned.

1-inch cubes
1/2 tsp. pepper
1/4 tsp. salt
2 Tbsp. canola oil
4 c. fresh baby carrots, cut
potatoes and green vegetables
1 med. onion, cut into wedg-
es
1 tsp. minced garlic
1 bay leaf
1 can (12-oz.) beer or nonal-
coholic beer
1 Tbsp. soy sauce
1 Tbsp. Worcestershire sauce
1 tsp. dried thyme
2 Tbsp. all-purpose flour
1/4 c. water
Hot cooked noodles
In a large skillet, cook bacon
over medium heat until crisp.
Remove to paper towels; drain,
discarding drippings. Sprinkle
beef with pepper and salt. In the
same skillet, brown beef in oil in
batches; drain.
Transfer to a 5-qt. slow cook-
er. Add the carrots, bacon, onion,
garlic and bay leaf. In a small
bowl, combine the beer, soy
sauce, Worcestershire sauce and
thyme. Pour over beef mixture.
Cover and cook on low for 5-
1/2 to 6 hours or until meat and
vegetables are tender.
In a small bowl, combine flour
and water until smooth. Gradu-
ally stir into slow cooker. Cover
and cook on high for 30 minutes
longer or until thickened. Dis-
card bay leaf. Serve beef with
noodles.
We had several visitors at
Elm Baptist Church on Sunday
and several little girls in Sunday
School. Yes boys, the girls are
ahead, you need to step up.
Bobby Asbill brought us
sweet corn from his fall garden
last Sunday and it is so good. It
was Bailey Asbill’s sixth birth-
day.
Chris Mynatt was home over
the weekend. Leon Asbill Jr.
fixed an early lunch, so they
could get back to A&M.
Hilda Ellison took Dorthy
Crabb stew, red beans and corn-
bread on Sunday afternoon. Dor-
thy is surely not well.
Rosalie Adams is still in a
Tyler hospital.
Lincoln Ridenour is in Chil-
ren’s Hospital in Houston. He is
my great-grandson.
Wanda Traylor enjoyed Sun-
day lunch at Deb Traylor’s and
visiting with the grandkids too.
I got 7/10 of an inch of rain
Sunday morning. Kody, Shan-
til and Allison Grace Wallace
got wet while getting inside the
church.
Elm Baptist Church appreci-
ates the money given in honor of
Robert Spinks. We surely miss
Irma and Robert.
Roger Asbill is really enjoy-
ing the football games on his
TV and Dorthy Crabb enjoys
the Mavericks, even the new
players. I read about them in the
Tyler Telegraph.
I will see you again in two
weeks. Here’s hoping our church
house will be full by then - and
I will be willing to stand. God

Happenin’s in Miller Grove

Wow, the rain Sunday was
nice and the cool front really
made it feel like late fall. I heard
from my cousin, Johnny Fergu-
son, that the leaves in Arkansas
this year are beautiful. Johnny
and Mary Lynn took a trip to
Eureka Springs last week with
Johnny’s sister, Bonnie, and her
husband George.
Saturday Aaron Baylus and
Alexsa Burkett had a baby show-
er in the school’s library. They
received several nice gifts. Their
little girl, Bailee, is due around
the middle of December.
Saturday was also the final
day of the Junior High Bas-
ketball Tournament at Miller
Grove. Our junior high boys

Their coach is Kyle Smith, who
is new to the district this year.
He, his wife and little girl live
in Rita and Billy Freeman’s old
house.
Our cross country boys com-
peted in the state meet on Satur-
day, too. Nathan George ended
up doing the best on Miller
Grove’s team. He placed 18th
in state! Way to go, Nathan.
As a team, Miller Grove placed
7th (which I think is great). The
course was a total 3.4 miles long
near Austin. Heck, I would have
stopped running after the 0.4
mile mark!

day. Everyone in the community

Monday morning the Student
Council sponsored a breakfast
for the local veterans in honor of
Veterans Day, which was Sun-
day. We had a good turnout and
lots of food. We may plan to
make the Veterans breakfast an
annual event. Thank you to all of
the vets and their families who
came out for the event.
