If you have mastered the
art of making a yeast dough,
you have in fact the basic
ingredient of a large variety
of maichulim such as tarts,
cakes, etc. Here are some of
them:
YEAST DOUGH
1 cake or package of dry yeast
*4 cup of lukewarm water
5'A cups flour
1 cup milk (scalded)
3 eggs
% cup sugar
Va lb. butter melted
Dissolve yeast in lukewarm
water. Mix eggs well, add sugar and
continue to beat until sugar dis-
solved, add milk which has cooled
a bit, add flour and dissolved
yeast and butter. Knead well on
floured board about five min-
utes. Grease bowl and replace
•dough. Cover and place in warm
place to rise until it has doubled
(about three hours). Shape as de-
sired using desired filling. Let
stand about one hour before bak-
ing. Bake in 350 degree oven about
thirty minutes. May use for
schnecken and bottom of peach,,
apple or plum cake.
SCHNECKEN

and 12 x 20 in size. Brush well with
melted butter and sprinkle with
sugar mixed with a little cinnamon
and seedless raisins. Roll, beginning
with long side, brushing with
melted butter as you turn. Cut in
even pieces about l'/2 inches in
length. Have muffin tins but-
tered and sprinkle with 1 table-
spoon brown sugar and 4 pecans
broken in large pieces. Place rolled
pieces in cups, cut side down and let
rise Vi again in size. Bake in 350
degree oven until medium brown
Turn pan upside down and remove
-tin. If carmelized sugar and nut-
are left in cups, cover tops of
schnecken with it.
