One Eeason Why Good Texas Cattle Fare
So Bad on the Chicago Market

Durinir the present week 50000 pounds
of wool have been shipped East from
Colorado City
Texas cattle have just about as much
show in the Chicago market at present as
Kilrain aid before Sullivan at Richburg
Fifteen carloads of beef cattle were
shipped recently from Amarillo to Chi-
cago aud on the day following thirty
carloads of stock cattle were shipped
from the same point
It is predicted that the enormous grain
crop raised in Texas this year will be fo
cause of more cattle being fed in
next winter than ever before Ev
cattle are low it will be better to
them than to have the grain wasted
A cattleman named Cobb was in the
city a few years ago having just re-
turned from Chicago where he had taken
a lot of beef cattle Ho was not inter-
viewed on the condition of the cattle
market but ho very forcibly told how it
was going in a short conversation with a
friend who met him on tho street with
the double question

you cattle

now did you do
The more cattle a man has the poorer
he is was Cobbs emphasized answer
A wellposted cattleman one who does
considerable shipping from Texas stated
in a conversation with a Gazette reporter
yesterday that there was comparatively
few good beef cattle being shipped from
Toxas now
There is no use shipping them lie
stated for the reason that they bring
nothing after they reach the markets
Chicago is full of inferior cattle which
aro bought up by canners for almost
nothing and as long as this is tho caso
good cattle will be low The condition of
the cattle market is bad hud I seo no
prospect of its improvement this year
and it would be no surprise to me if it
was just as bad next year
Dehorning seems to bo growing in fa-
vor and it has no doubt come to stay
The objection to the practice that it is
cruel amounts to nothing really when it
is considered that it is no more cruel or
painful to dehorn than it is to castrate
In fact there is no cruelty in it as the
pain is only of short duration not lasting
as long as that caused by
castration or by bnnidinc Tho argu
ments in favor of the practice aro all good
ones Take the weapon of offense from
an animal his horns and he ceases to
be offensive and tiie goring of one steer
or cow by another is ny longer seen
When cattle aro feeding 7tho benefits of
dehorning are plainly tobe seen They
take their food quietly and in so doing
derive more benefit from it Dehorned
eale shipped in cars arrive at their des
tYlJTition fresher and in better condition
generally than those with horns and
they can be loaded with more comfort to
them

There is money enough sent out of
Texas for pork and pork products every
year to run the state government said
a progressive farmer to a Gazette re-
porter yesterday aud is all the result
of a mistaken idea that bacon and lard
can not be successfully made in this
state I was of that opinion myself
years ago without having tiied to cure
bacon When I iirst came to Texas
I saw every farmer buying his bacon
and lard aud when asked why
that was I was told that on account of
tho climate no bacon or lard could be
made in the state I accepted the prop-
osition as correct and joined the rest of
the fellows and bought my pork products
for several years I raised a few hoes
but only killed one now and then using
a portion of it myself aud giving the rest
to my neighbors Some times I would
kill two or three shoats and sell
them to butchers or consumers in
Fort Worth For years after I
came to Texas I never tasted or even
saw a piece of homocured bacon A
cold snap blow down from the north one
winter in January and I had six good
fat hogs on my place aud I determined
to try the experiment of converting
them into bacon I killed them and
when dressed they weighed on an aver-
age of 21 o pounds I hung them up left
them hanging outdoors all night and
the next morning they were frozen stiff
I cut them up salted them down and
did with the pieces just as I had
done with meat in Kentucky Well sir
I never lost a piece of that moat and I
had just as good lard hams shoulders
and sides all the year as is sold to
Texas by Northern packers I profited
by the experiment and have been making
all my own bacon and lard ever sinceand
for ten years I have not bought a piece of
salt meat Just as good and just as
sweet bacon can be cured in Texas as in
any state and it is just cussed lazing
that causes people not to make itJ Ja
