In one respect statistics of live stock, from what-
ever source, are peculiarly lacking. While figures
on actual numbers and values of live stock are
ample, not a great deal is known of actual annual
production of beef, veal, mutton and pork. The
biennial census of manufactures, of course. obtains
the production of the chief slaughtering ani meat
packing establishments, but it leaves to guesswork
the amount of meat produced in local slaughter
houses and on farms. In 1910, the Census Bureau
covered thes- three items (for the year 1909)
under the heading of "Number of Animals Slaugh-
tered." Results are given below for the United
States as a whole and for Texas separately:

Using ascertained data, including census reports
and reports of animal slaughter under Federal in-
spection, ands certain formula. the United States
Bureau of Animal Husbandry has estimated the
number of pounds of each of the principal meat
products produced in the United States and by ad-
justing this to figures on exports and imports has
arrived at the per capita consumption. Resume of
their findings for recent years are given below:

However, when it comes to the matter of statis-ties by States further difficulties arise. In the
first place, even in the census report of 1909 the
combined figure showing packing-house and retail
and farm slaughter does not represent Texas pro-
duction entirely accurately for Texas packing plants
ship many animals into the States, and, on the
other hand, many Texas animals are shipped to
packing-houses of other States. Other local factors
enter into estimating production by States so that
averages for the United States are not entirely ap-
plicable. However, by weighing all evidence, the
following figures upon Texas_ total production and
consumption have been arrived at as probably fairly
accurate for 1926. Conclusions are reached pri-
marily on the assumption that meat production will
be in proportion to live stock on farms, the results
of inquiry as to the United States as a whole be-
ing applied to Texas.
