;duce enough food to store for
. .e non-productive months.
In East Texas areas — during
good garden years — the garden
can furnish fruits and vegetables
during nine monUu. The length
of the season for your garden de-
fends upon your skill as a gar-
dener, cooperation of the weather,
and freedom from insects.
This year you will probably
want to store enough fruits and
vegetables to last your family
through the lean months. Here is
your canning- and food storage
budget lor one person. Multiply
this quantity of food by the num-
ber of persons in 'your family.
88 pounds of meat and fat in-
cluding poultry and fish; 100
pounds of Irish and Sweet pota-
toes; 22 quarts of green and yel-
low vegetables; 22 quarts of other
kinds of vegetables; 22 quarts of
tomatoes and citrus fruits; 22
quarts of other fruits; 7 pints of
preserves and jellies; 1 gallon of
pure can or sorghum syrup; 5
quarts of pickles and relishes.
You may. estimate the amount of
fresh vegetables required to store
this amount of food by allowing
4 pounds of fresh vegetables for
one quart of canned vegetables:
A quart will provide about 8 ser
vings. This is the season too to
count your containers and provide
enough of the right kind and size
for aU of the food you intend to
stoJS*~-
There are several ways of stor-
ing foods, use all of them so that
your meals will be interesting.
But there is this warning, meats
and all vegetables" except toma-
toes must be canned with a pres-
sure cooker If you avoid the risk
of. killing your family with botu-
lism poison.
If yoir do not have a pressure
cooker there are still satisfactory
methods you can use. Dried mus-
tard greens, snap beans, cat-rots,
english peas and etc., are delicious
and "colorful when the new meth-
od of drying are used. Almost all
