butter. tablespoons bacon fat,
boiling water.
^ Melt butter and bacon fat in ket-
tle ." Add beans washed and cut in
inch lengths. Cover tiRhtly and
cook ten minutes. Stir frequently
to prevent burning and to let the
beans brown n bit all over
Add boiling water to cover and
simmer two hours. As the water
cooks away add more to -prevent
burning, hut when the beans are
done they should be quite dry. Add
snlt and pepper the last half hour
of cooking.
Creamed String Itenns
One qqart beans, 3 tablespoons
butter, 2 tablespoons flour, one
and one-half cups milk, salt and
pepper, J. tablespoon minced parsley.
Cook beans in boiling water to
cover for an thour. Fresh young
beans should cook soft in this length
of time. Add one teaspoon salt
when beans are half done.
Drain and save one-half cup of
the liquor. Melt butter, stir in
■our. add gradually milk and watf^i
in which beans were cooked.
Season with salt and pepper. Add
heaas to auce and make very hot.
Add minced parsley and serve.
