There are several methexis of
keeping eggs for writer use,
says a winter in the Chicago
Record. The lx»t one is to dip
each egg in melted paraflin;when
coagulates ou tbe surface exan
ine carefully and pour a little
extra paraffin on tbe spotr. im-
perfectly covered. When tbe
air is entirely excluded trom the
egg it will keep a lung time if i
put away in a cool, dry place. !
Pack in a nice wooden box, two
or three layers deep, small end
down. If pa raftin is not at band
good melted beef drippings or
lard may be used instead, and
with this you can teel sure of
your eggs for two months pr
more if they are kept iu a cool
place, where the fat will not
turn rancid. Of course they
must not freeze. Tbe grease fills
the pores and shuts out the air
and thus keeps the egg from dis-
integrating
Another excellent way to
pack eggs for winter use is to
press them, smill end down, in
a bed of common salt (not rock
•alt.) When one layer is placed
fill in all around carefully with
the salt and place in a second
layer of eggs, and so continue
until tbe box is full. Press the
•alt lightly but firmly in place,
so that all the air is excluded,
and they will be good for two or
three month*.
Eggs may be packed in a
weak brine of limewater and
•ait. A pint of salt and pint of
lime to a common bucket of wat-
er will preserve them for a
month or two, but tbe flavor i»
somewhat impaired. When in-
ingredients are diasolred the
e<gs may be packed in a stone
crock, small end down, and
covered with the liquid. Strong
lime would eat tbe shells and
very strong lime would cook
tbe eggs.
