Oh Fat
The dietary guidelines from major
health organizations agree that
Americans need to cut back on fat.
According to Dr. Alice Hunt, UJS.
Department of Agriculture
guidelines recommend that
Americans avoid too much fat,
■ saturated fat and cholesterol. The
American Dietetic Association
recommendations suggest limiting
fat to no more than one-third of daily
calories and selecting a variety of
saturated, polyunsaturated and
monosaturated fats as well as
eating lean meats and low-fat dairy
products. The Heart Association has
more specific recommendations on
fat, advising that saturated fat
should be reduced to less than 10
percent of total calones and
polyunsaturated fat should also
supply less than 10 percent of total
calories, with total dietary fat not to
exceed 30 percent of daily calories.
The AHA also recommends that
dietary cholesterol be reduced to
less than 300 milligrams per day.
Dear Friends,
The Christmas holidays are here
and we are thinking of our families
and friends. This is our opportunity
to share a little of what is happening
in our lives in the beautiful country
of Chile.
For many of you, two years have
passed since we have written.
Christmas 1884 found Rodney in bed
with hepatitis, and Christinas 1885
found us stateside on furlough. It
seems that we saw very few of our
friends and relatives. My father
passed away In August of 1865, so
most of our furlough was taken
responding to family needs and
responsibilities.
We returned to Santiago in April of
this year. Rodney continues to
serve as Director of Evangelism for
the Convention and pastors a small
mission. Virginia spends much of
her time as hostess of the Chile
Mission which includes
administering five guest apartments
and receiveing international guest.
She also has worked to help develop
the WMU and Sunday School in the
Betania (Bethany) mission.
Let us tell you about our mission.
Nothing is as exciting as watching
the growth of a new church. About
two years ago we decided to begin
helping this small mission. It had
started about four years prior to that
It had a small Sunday School and
met in a pre-fabricated house. The
mission had begun to build a chapel.
The foundation and metal
framewrork were in place. There
had not been any evening services.
Rodney was able to begin Sunday
evening services and mid-week
prayer and Bible Study services as
well as give assistance and
supervision to the construction.
Little by little, literally brick by
brick, this small group has worked
to build this mission. Many
problems, set backs, and even the
1984 earthquake kept the pace slow.
But praise the Lord, this November,
aftertwoyearsof work, the chapel is
now being occupied, though not
completed. The 28-29-30 of

November, the mission had its first
evangelistic campaign. There were
many professions of faith and 106
people present at the closing service
on Sunday night. Now with the
space that we have, we feel we can
serve more people.
Please pray with us for this young
congregation. It needs faithful and
responsible leadership, Sunday
School teachers, and a will to carry
the gospel to the thousands of people
who live around the chapel. Pray tor
the material needs, chairs for the
sanctuary, a bathroom, and Sunday
School facilities. We hope that you
will become a part of God’s work in
this little mission by praying with us
and thanking God for all He has done
with and through this small group.
Your prayers can make a difference
in the success of failure of Mission
Betania next year.
Another highlight of the year was
a trip north through the Atacama
Desert, to speak and visit in eight
churches. Between Santiago and
our last destination lay about 23
hours of driving in some of the most
solitary desert in the world. But
here one sees the hand of God, His
majesty, and sees and feels the
power of the Creator and man’s
helplessness. We were impressed by
the warmth of the people in these
churches. The life in these mining
towns is very hard, yet dedicated
pastors are giving their lives and the
lives of their families, so that the
gospel can be preached. How little
most of us know of true sacrifice.
Pray for the pastors in Diego de
Amagro, Chuquicamasta, Calama,
Vallenar, and Antofagasta. Pray
for a new pastor to replace the
national missionary living in
Vallenar and a pastor for the First
Church of Calama. These are small
cities in a sea of desert land in
northern Chile. But the people are
very real. Pray for them with us.
This past Sunday morning as we
prepared to attend Sunday School
and church, we listened to a tape of
the 1982 cantata from Pantano
Baptist Church in Tucson. It
