1 can of apneot halves
3 Tablespoon brown sugar
1 Tablespoon cornstarch
1/8 teaspoon cinnamon
Bake sweet potatoes or dram
canned sweet potatoes. Add
canned apricots, reserving 1/2 TO TREAT
cup syrup. Reserve 1/2 cup syr- 2 large sweet potatoes, peeled
up from potatoes or make syrup and cubed
for baked whole by using 1/2 cup
water and 1/4 cup brown sugar.
Place potatoes and apneots in a
greased 1-1/2 quart baking dish.
In a saucepan, combine brown
sugar, cornstarch, cinnamon and
reserved 1 cup of syrup; stir until
smooth.
Bring to boil over
um-high heat, stirring constantly.
Remove from heat; pour over mer for 10-15 minutes or until
potatoes and apneots.
Bake uncovered at 350 degrees
F for 25 mmutes or until bubbly
Yield: 6 servings
*May replace apricots with
canned peaches, if desired
