Mediterranean diet and
stay active are more like-
ly to maintain a healthy
weight. Mediterra-
nean-style meals loaded
with vegetables, fruits and
grains are higher in fiber,
are quite filling and this
reduces the desire to add
extra calories.
More vegetables, fruits
and grains with less meat
makes this plan consistent
with the American Cancer
Society recommendation
to follow a plant based diet
meaning that this eating
plan lowers our risk of can-
cer.
Because the Mediterra-
nean diet is low in saturat-
ed fat (less meat) and high
in monounsaturated fat (ol-
ive oil, nuts, avocados) and
dietary fiber (fruits and
vegetables), it lowers heart
disease risk. The antiox-
idants in olive oil reduce
LDL (bad) cholesterol and
of your choice any time
there’s a disruption.

In the early 20’s when
the George Brittain fami-
ly lived next to us, where
the trailer park is now,
Lucy and I played with
the three Brittain girls,
Rozell, Johnny and Pau-
line. Grace Doggett Davis
(Dot’s Mother)
was our age and she
and her family lived at
Good Hope. Her father
was a farmer and raised
cotton. When he brought
his wagon load of cotton
in to be ginned, Grace
would ride on top of the
cotton and get off at the

her dad was through with
the ginning and then they
would go home.
It was always a special
time when Grace was
there to play games like
Jacks, Hop-scotch and
jumping the rope with us.

As one colleague once
put it, “We’re not getting
out of this alive.” But if I
could adopt a lifestyle that
might yield a few more
years on this earth or per-
haps improve the quality of
my later years, what would
it be?
The Mediterranean diet
is an eating plan originally
inspired by the dietary pat-
terns of Greece, Southern
Italy, Spain and Morocco
in the 1940s and 1950s.
This is really more of a life-
style shift than a true diet.
The plan focuses on
high consumption of olive
oil, legumes, unrefined
grains, fruits, and vege-
tables with moderate to
high consumption of fish.

ing second-hand smoke,
which I was exposed to
for many years. If I had
smoked it could be even
worse. The only illness
like that was when I was
in the first grade and had
measles, the flu and pne-
monia. They told me for
years that I nearly died.
So this or the cat scratch
could have caused my
bad lungs.

tive than a low-fat diet
in making long-term
changes to lower heart

dle-aged adults in the Med-
iterranean region change
from an active lifestyle
and Mediterranean diet
to a less physically active
lifestyle and a more typical
western pattern, incidence
of heart disease goes up.
It is not clear whether the
diet or the activity plays
the greater role.

Mrs. Marcellus White,
the former Eula Lathan,
called to tell me she has
just returned from a trip
to California. She flew
out there accompanied by
her niece to help Eula’s
sister Willie Mae Lathan
Johnson celebrate her
100th birthday on June
28. However, the day be-
fore her birthday, Willie
Mae’s night gown caught
on fire as she was prepar-
ing her breakfast. She fell
to the floor and rolled over
several times and put the
flames out. She was not
burned but she broke her
hip in the fall.
A rod was inserted
in her hip during surgery.
While she was in the hos-
pital, she had cataract eye
surgery. All this at age
100! Eula said her sister is
recovering alright.
Eula will be 93 Feb.

member this Lathan fami-
ly of Angie, Ludie, Rufus,
Jim, Mose and Lawsie
who will be 98 on Aug.

So let’s turn these
guidelines into some prac-
tical suggestions for the
East Texas palate. Re-
member that small chang-
es over time add up to
great health benefits. This
time of year it’s natural for
us to eat more vegetables.
The farmers’ market and
home gardens provide am-
ple fresh produce. Instead
of fried squash, let’s saute
it in olive oil with garlic and
onions. In order to eat less
meat, we need to identify
more meatless meals that
do not compromise flavor.
One of my favorites is a
homegrown tomato sand-
wich. And with cucum-
bers so abundant try them
in a little red wine vinegar
and a dash of coarse black
During those cotton
hauling-to-the-gin days,
balls of cotton littered the
sides of the roads and in
our yards, like chicken
feathers once did during
the early days of the Ty-
son plant. We kids had
fun gathering the cotton
up and “ginning” it by
removing the seed and
would make cushions for
our dolls.
