the "America Parade of Stars"
Pageant, recently. She was award-
ed second runner-up in beauty,
first runner-up in photogenic and
first runner-up party dress. She
was also crowned in the divisions
of sleepwear, swimwear, sport-
swear and in a dipaer derby.
Supper
The Portland Lions Club will hold
a Mexican food supper from 5 until 8
p.m. Friday, Nov. 14, at the junior
high.
Plates are $3 each and may be
eaten at the school or taken home.

Few desserts can compare to a
luscious cheesecake. There is such
an endless variety of different fill-
ings, crusts and toppings.
Whichever one that you make is sure
to be a winner, especially when it’s
homemade.
This month, help celebrate Na-
tional Cheesecake Month by trying
one of these different versions with
your family and friends.
Portland Girl Scouts Host
District Brownie Fun Day
Following a lunch beneath the
trees of the park, Brownies began to
swap inexpensive handmade items
and met girls from many area
towns. Some of the favorite swaps
were sticker books, bows on a hair
pin, paper fans and painted shells.

2 teaspoons vanilla extract
Preheat oven to 300 degrees. Com-
bine margarine, crumbs and sugar;
press firmly on bottom of nine-inch
springform pan. In large mixer
bowl, beat cheese until fluffy.
Gradually beat in sweetened con-
densed milk until smooth. Add re-
maining ingredients; mix well. Pour
into prepared pan. Bake one hour
and five minutes or until set. Cool.
Chill thoroughly. Garnish as
desired. Refrigerate leftovers.
Makes one nine-inch cheesecake.

Whipped cream
Crushed hard butterscotch candy
Preheat oven to 375 degrees. Com-
bine margarine, crumbs and sugar;
press firmly on bottom of nine-inch
springform pan. In medium
saucepan, combine sweetened con-
densed milk and water; mix well.
Stir in pudding mix. Over medium
heat, cook and stir until thickened
and bubbly. In large mixer bowl,
beat cheese until fluffy. Beat in eggs
and vanilla then pudding mixture.
Pour into prepared pan. Bake 50
minutes or until golden brown
around edge (center will be soft).
Cool to room temperature. Chill
thoroughly. Garnish with whipped
cream and crushed candy.
Refrigerate leftovers. Makes one fl-
inch cheesecake.

CHOCOLATE CHIP
CHEESECAKE
1% cups finely crushed creme-
filled chocolate sandwich cookies
(about 18 cookies)
2 to 3 tablespoons margarine or
butter, melted
3 (8-ounce) packages
cheese, softened
1 (14-ounce) can sweetened con-
densed milk, NOT evaporated milk
3 eggs
2 tablespoons vanilla extract
1 cup mini chocolate chips
1 teaspoon flour
Preheat oven to 300 degrees. Com-
bine crushed cookies and
margarine; press firmly on bottom
of nine-inch springform pan or 13-by-
9-inch baking pan. In large mixer
bowl, beat cheese until fluffy.
Gradually beat in sweetened con-
densed milk until smooth. Add eggs
and vanilla; mix well. In small bowl,
toss together % cup chips with flour
to coat; stir into cheese mixture.
Pour into prepared pan. Sprinkle re-
maining chips evenly over top. Bake
55 to 60 minutes or until set. Cool.
Chill thoroughly. Garnish as
desired. Refrigerate leftovers.
Makes one 9-inch cheesecake.
CREAMY FRUIT & NUT
CHEESECAKE
¥3 cup margarine or butter,
melted
1¥4 cups graham cracker crumbs
¥4 cup sugar
2 (8-ounce) packages
cheese, softened
1 (14-ounce) can sweetened con-
densed milk, NOT evaporated milk
1 envelope unflavored gelatin
¥4 cup lemon juice from concen-
trate
P/3 cups (one-half a 28-ounce jar)
ready-to-use mincemeat (regular or
brandy and rum)
¥2 cup chopped nuts
1 tablespoon grated lemon rind
1 cup (¥2 pint) whipping cream,
whipped
sour cream and nuts, optional
Combine margarine, crumbs and
sugar; press firmly on bottom of 9-
inch springform pan or 9-inch
square baking pan. In large mixer
bowl, beat cheese until fluffy.
Gradually beat in sweetened con-
densed milk until smooth. In small
saucepan, sprinkle gelatin over
lemon juice; let stand one minute.
Over low heat, stir until gelatin
dissolves. Add to cheese mixture
with mincemeat, ¥2 cup nuts and
rind; mix well. Fold in whipped
cream. Pour into prepared pan.
Chill three hours or until set. Gar-
nish with sour cream and additional
nuts if desired. Refrigerate lef-
tovers. Makes one 9-inch
cheesecake.
LUSCIOUS BAKED
CHOCOLATE CHEESECAKE
¥3 cup margarine or butter,
melted
1¥« cups graham cracker crumbs
¥4 cup sugar
3 (8-ounce) packages
cheese, softened
1 (14-ounce) can sweetened con-
densed milk, NOT evaporated milk
1 (12-ounce) package semi-sweet
chocolate chips or 8 (1-ounce)
squares semi-sweet chocolate,
melted
The annual Girl Scout District
VIII Brownie Fun Day was held on
Saturday, Nov. 1, at Portland’s
Memorial Park.
Approximately 300 girls attended
from Beeville, Odem, Refugio,
Woodsboro, Aransas Pass, Port
Aransas, Fetus' Ingleside and
Portland.
An opening flag ceremony began
at 10 a.m. with the “Pledge of
Allegiance” and “America the
Beautiful,” led by Portland Junior
Troop 854.
Scouts then began the activites for
the day centering on the themes
“Fun in Scouting,” “World of Girl
Scouting,” “World of Outdoors,”
“Yesterday, Today and Tomorrow” 1
and “Ceremonies for Beginners.”

terscotch flavor pudding and pie fill-
ing mix

Celebrate Cheesecake Month
CREAMY BAKED
CHEESECAKE
cup margarine or butter,
melted
l¥i cups graham cracker crumbs
¥4 cup sugar
2 (8-ounce) packages
cheese, softened
1 (14-ounce) can sweetened con-
densed milk, NOT evaporated milk
3 eggs
¥4 cup lemon juice from concen-
trate
1 (8-ounce) container sour cream
Peach melba topping, optional
Preheat oven to 300 degrees. Com-
bine margarine, crumbs and sugar;
press firmly on bottom of 9-inch spr-
ingform pan. In large mixer bowl,
beat cheese until fluffy. Gradually
beat in sweetened condensed milk
until smooth. Add eggs and lemon
juice; mix well.
Pour into prepared pan. Bake 50 to
55 minutes or until set. Cool. Chill
thoroughly. Spread sour cream on
top. Serve with peach melba topp-
ing, if desired. Refrigerate lef-
tovers. Makes one 9-inch
cheesecake.
Peach melba topping: Reserve %
cup syrup drained from 1 (10-ounce)
package thawed frozen red raspber-
ries. In small saucepan, combine
reserved syrup, ¥4 cup red currant
jelly and 1 tablespoon cornstarch.
Cook and stir until slightly thickened
and clear. Cool. Stir in raspberries.
Drain one (16-ounce) can peach
slices; arrange on cake. Top with
sauce.
New York style cheesecake: Omit
lemon and sour cream. Preheat
oven to 350 degrees. Beat 4 (8-ounce)
packages cream cheese until fluffy.
Gradually add sweetened condensed
milk; beat until smooth. Add ¥3 cup
unsifted flour, four eggs and one
tablespoon vanilla extract; mix
well. Pour into prepared pan. Bake
one hour or until lightly browned.
Cool to room temperature. Chill
thoroughly.

BANANA NUT CHEESECAKE
1 cup chocolate wafer crumbs
¥<i cup margarine, melted
2 (8-ounce) packages cream
cheese, softened
¥2 cup sugar
¥2 cup mashed ripe banana
2 eggs
¥4 cup chopped walnuts
¥3 cup milk chocolate pieces
1 tablespoon margarine
2 teaspoons water
Combine crumbs and margarine;
press onto bottom of 9-inch spr-
ingform pan. Bake at 350 degrees for
10 minutes.
Combine cream cheese, sugar and
banana, mixing at medium speed on
elecric mixer until well-blended.
Add eggs, one at a time, mixing well
after each addition. Stir in walnuts;
pour over crust. Bake at 350 degrees
for 40 minutes. Loosen cake from
rim of pan; cool before removing
rim.
Melt chocolate with margarine
and water over low heat, stirring un-
til smooth. Drizzle over cake. Chill.
Makes 10 to 12 servings.
Variation: Reduce crumbs to %
cup and margarine to 2 tablespoons.
Press onto bottom of seven-inch spr-
ingform pan. Continue as directed
only increasing final baking time to
one hour.

Donald Kedzie, both of Portland,
were united in matrimony on Satur-
day, Oct. 18, at four o’clock in the
evening at Our Lady of Mount
Carmel Catholic Church.
The Rev. Joseph Berger of-
ficiated.
The bride is the daughter of Mr.
and Mrs. Gerald L. Gibson of
Kingsville; the groom is the son of
Dr. and Mrs. Donald P. Kedzie of
Jonesboro, Ark.
Traditional procession and reces-
sion marches were played by Brian
Coufal of Kingsville. “Lord, it
Wouldn’t be Complete” was compos-
ed and sung by Laurie Gibson, Sally
Butler and Vivian Fernandez.
The bride, given in marriage by
her father, wore an ivory satin
gown, covered in ivory organza
which had satin dots and an em-
broidered scalloped edge. A fitted
bodice with a high neckline and long
organza sleeves fell into a full floor-
length skirt. Strips of satin scallops
were appliqued to the neck, wrists
and edge of the bodice above the
bustline.
She wore a Juliet cap covered with
ivory satin and organza with a
finger-tip veil of tulle; the edges of
the cap were bordered with satin
scallops. She carried an arm bou-
quet of long-stem red carnations
with baby’s breath and ribbon.
Maid of honor was Laurie Gibson
of Albuquerque, N.M., sister of the
bride. Matron of honor was Sally
Butler of Fox, Okla., also a sister of
the bride. Bridesmaids were Lisa
Nemec of Corpus Christi, Cheryl
Burr of Wauwatosa, Wise., Denise
Cessac of Portland and Janet
Crawford of Sandia.
Their dresses were of ivory satin
fitted slips with spaghetti straps.
The outer shell dress was ivory
organza; each was tea-length with
long sleeves tying at the wrists and
waist by satin ribbons and sashes.

ivory shirts. The groom was similar-

The bride’s mother wore a silk jac-
quard taupe street-length dress and
a white carnation corsage. The
groom’s mother wore a silk street-
length dress of sapphire blue. She
also wore a white carnation corsage.
Following the ceremony, a recep-
tion was held at Northshore Country
Club’s main dining room.

Melanie Havard of Taft, Tammera
Payne of Calallen, Sherri Huskey of
San Antonio and Sherri Mylius of
Austin.
A rehearsal dinner was held on
Friday, Oct. 17, at Crystal’s Confec-
tionary in Corpus Christi.
Following a wedding trip to
British Columbia, Canada, the cou-
ple will make their home in
Portland.
The bride is a graduate of Texas
A&I University and is employed as a
certified public accountant with M.
Michael Smith and Co. in Corpus
Christi.
The groom is a graduate of Texas
A&I University and is employed as
operations manager for Electrical
Distributors of Texas, Inc. in Aran-
sas Pass.
The Portland Extension
Homemakers Club will meet at 9:30
a.m. Wednesday at Portland Crafts
and Hobbies in Northshore Plaza.
The store owner will give a
demonstration on bead crafts.
