to make the most of the egg sup-
ply and to get an extra bit of
milk into the family diet.
NOODLE MERINGTE
PUDDING
212 cups milk
% cup sugar
1s teaspoon salt
3 ounces fine noodles
2 eggs, separated
1 teaspoon vanilla extract
14 cup tart marmalade or jam
%-cup sugar
Scald milk in top of double
boiler. Add % cup sugar, salt
and noodles. Cook over boiling
water 20 minutes. Beat egg yolks.
Add to noodle mixture while stir-
ring. Cook 2 minutes, stirring
constantly. Add vanilla extract
and pour into 1-quart casserole.
Spread with marmalade or jam.
Beat egg whites stiff. Gradually
add % cup sugar, beating it in
to make a meringue. Spread on
pudding. Bake in moderate oven
(350° F.) 15 minutes. Serve warm
or cold.
Yield: 4 servings.
