•4 carrots, sliced
•1 onion, chopped
•2 tomatoes, chopped
•4 toasted sandwich buns
•Prepared coleslaw
•1/4 cup tartar sauce
1/2 cup seasoned dry bread crumbs
Preparation: In large skillet, heat olive oil. Add lemon juice, dill weed,
salt and pepper, then carrots, potatoes, and onion. Cover skillet and
cook mixture for 8-10 minutes, stirring frequently, until crisp tender.
Add fish to skillet. Cover and cook 5 minutes longer. Then add toma-
toes to skillet and cover again. Cook until fish flakes when tested with
a fork, 2-3 minutes longer. Serves 4

•1/4 tsp. salt
•1 Tbsp, fresh thyme leaves
•2 cups sliced strawberries
Preparation: Rinse lentils under running water. Place in a large pot
with plenty of cold salted water and boil over high heat for 10 min-
utes. Drain and discard water.
Add lentils, 8 cups of cold water, and bouillon cube to a large pot
and bring to a boil. Boil for 15 minutes and add rice. Reduce heat to
medium-high and continue to boil, uncovered, for 10 minutes.
Add tomato sauce (or tomato paste and water), rosemary (or bay

•2 potatoes, thinly sliced
•1 lb. halibut fillets
•1/3 cup butter, melted
•1/3 cup sugar
•16-oz. can apple pie filling
•1/4 cup lemon juice
•2 Tbsp, honey

•1 pound asparagus
•4 cups baby spinach leaves

•1 1/2 cups of unseasoned tomato sauce or 3 tablespoons of tomato
paste dissolved in 1 1/4 cups of water
•1 sprig of fresh rosemary (or 1 bay leaf, or 1 sprig of fresh oregano)
•1/4 teaspoon of freshly ground pepper
•1/4 cup of olive oil (optional)
•1-1/2 lb. thin sole fillets (1/2" or less)
•1 Tbsp, bottled horseradish, drained
•2 Tbsp. Dijon mustard
•2 Tbsp, grated Parmesan cheese
•1 Tbsp, melted butter
Preparation: Place fillets on a broiler pan. In small bowl, mix horse-
radish, mustard, lemon juice, cheese and yogurt. Add butter and pep-
per and blend well. Spread the mixture over the fillets in a thin layer.
Broil 8" from heat source for about 10 minutes, until fish flakes easi-
ly when tested with a fork. Serves 4-6

low and cook uncovered for 10-15 minutes, until liquid reduces and

Preparation: Preheat oven to 450 degrees and spray a jelly roll pan
with nonstick cooking spray; set aside. Combine tartar sauce and
lime juice in a shallow pan. Coat fillets with this mixture, then roll in
bread crumbs to coat. Place in prepared pan.
Bake at 450 degrees for 8-12 minutes until fish flakes easily when
tested with a fork. Serve on toasted sandwich buns with tomato,
cucumber, more tartar sauce, and coleslaw. 4 servings

Preparation: Toss vegetables in large bowl. Mix remaining ingre-
dients in saucepan and bring to a boil. Boil for 2-3 minutes. Let
cool. Pour over vegetables. Mix, pack in airtight plastic freezer con-
tainer and freeze.
To serve, thaw in refrigerator overnight. The slaw remains crisp
and tastes delicious. 12 servings
OVEN BAKED SALMON WITH HERBS
•1 salmon filet - about a pound
•2 - 4 T fresh herbs, chopped (thyme or dill or anything you like)
•1/2 teaspoon pepper
•1/2 teasoon salt (a bit more if kosher, or if fish is skinned)
•1 teaspoon oil, if that - you just need a very thin film

Preparation: 1. Heat the oven to 200 F.
2. Chop up the herb, and mix it with the salt and pepper, [lemon
thyme, regular thyme - even parsley or sesame seeds].
3. Smear the oil on an oven-proof serving platter, and put the fish on
top. If the filet is skinned, put some salt and pepper on both sides,
otherwise just put the fish skin side down and season the top.

by Edwards, provides common
sense protections for consumers by
ending credit card practices that the
U.S. Federal Reserve has called
"unfair, deceptive, and anti-compet-
itive." The bill passed last year by
strong bipartisan votes of 361 to 64
in the House and 90 to 5 in the
Senate.
