Why Does It Cost So Much to Live?

This problem never pressed so bard
on two classes of people as today.
1-or the farmei.the past ten or twelve
years have seen a permanent reduc-
tion of one-third or more in all he
gets for grain;of from one-half to one-
third in the price of the meat he
raises- of an equal reduction in his
milk and in this state Delaware and
Pennsylvania an almost complete
loss of the market for the first early
vegetables and with it the best pro-
fits of the year.
The farmer’s loss has not been the
householder’s gain. Bread meat and
milk are as high as they ever w6re.
Cheap transportation has reduced the
price of a barrel of flour to from $2 GO
to $4.80 a barrel—quoting this week’s
prices. But the 300 pounds of bread
which a barrel will make sells for $l6
to $2O if the bread be bought by the
loaf. If steers can be bought from 5c
to 6c a pound the householder goes
on paying 18c to 30c a pound for all he
buys. If he is wise euough and his
wife is skillful enough to make
a round steak at 12c a pound
or chuck ribs at 10c a pound as
palatable as better cuts he is still
paying twice the cost of the original
article for the poorest cuts. The
farmer can only get 3c to 3 l-2c a
quart for his milk but the customer
pays 8c a quart for the best milk 6c
and 7c for a fair article and 5c for a
poor one.
We doubt if there is a single article
which is currently used for food ex-
clusive of sugar which is not doubled
in value before it reaches the con-
sumer. One-half of the average in-
come up to $3000 or even $4000 a year
is spent on food and its preparation
and fully one-fifth on food direct.
As nearly all of the food doubles in
value after it leaves the farm for the
great mass of the community $1 in $8
of the total wages goes to the middle-
man who handles food.
“The railroads the great corp-ara
lions?” shout a great chorus of objeto-
ors in explanation. Oh no not all.
The railroad charges only 40c from
Chicago and 65c from Minneapolis on
the barrel for fiour. The meat has
cost about l-2c a pound to bring it
from places where it costs alive
from 2c to 4c a pound. The milk is
delivered to the dealer in most cities
at from l-4c to l-2c a quart for all
charges of transportation. If every-
thing else were as cheap and econom-
ical as the railroads food would cost
only a trifle over half what it does
now say two-thirds the present
charge.
The real pinch is in our wasteful
system of retail delivery. Watch a
milkman delivering milk along a
long route—here a few quarts and
there a few crossing his track skip-
ping houses and traveling miles by a
devious route to serve a few families.
It his houses were bundled together
it would not take half the time or
half the cost. A Brooklyn Butcher
has just published his sales for Jan-
uary and February. He sold 745.14
at a cross profit of 121.61 out of which
the expenses of the store took
$49.76 and delivery $1490. This
brought the profit to $57.95
or 8 per cent on the over-
turn for Interest on capital and risk.
To do this he had to sell a steer which
cost 6 l-2c a pound at an average of
11c and it cost as much to deliver the
meat in Brooklyn as to bring the steer
from Chicago. It is just so with
bread. After the railroad lias
brought a barrel here for 40c it costs
$l4 to $l5 to make it and deliver it.
The result is that flour is cheaper
here than in London and bread near-
ly twice as dear per loaf.
It will never cost any less to live
until the same vast organization is
applied to retail delivery which has
revolutionized wholesale transporta-
tion. Three great roads bring
everything to Philadelphia six or
seven do the same tor New York four
or five do it for Boston. They do it
cheaply and do it well. When retail-
ing is done on the same vast scale
living will be cheap. It will not be
until then.
We have changed all else in trans-

and with no system and it costs us
half our outlay on food.
