The purchase of a whole ham is
always sn economical buy especially
when the mercury is on the decline
because of all times it is then that
the body should be well nourished.
Ham as yon know is not only high
in protein—body building food but
also in fat which the body requires
in order to be kept in perfect condi-
tion. Fat nets as body fuel ns docs
gasoline and oil for the automobile —
neither will work efficiently without
these necessary energy-giving mater-
ials The fact that ham may be
served in such a variety of attractive
ways and combines so well with win-
ter vegetables makes it particularly
valuable for its food properties.
The following meals have been
planned with the ideu of the beat pos-
sible utilization of the ham that is
having the ham cut into three parts
—the butt end for baking the center
for slicing and the shank end for boil-
king.

STUDIES COOKING
TO HELP SELLING
DEMONSTRATIONS
Mrs. C. M. Axkey is one of the best
known food demonstrators in San An-
tonio And is a familiar figure in the
stores and shops to thousands of San
Antonio housewives. She is going to
California to take post graduate work
in scientific cooking to further sales
of Mission Proviaion Company prod-
ucts.
SHOWS HOUSEWIVES
COOKING METHODS
Mrs. C. M. Askey who is known to
hundreds of housewives will leave
May 1 to take up an additional course
in the science of cookery in Cali-
fornia. The course will cover a period
of six weeks. When sho returns she
will go to Houston to open the new
demonstrating work for the Mission
Provision Company.
Mrs. Askey holds a certificate in
domestic science from Maryland. For
sixteen years she has been working
as a demonstrator in different prod-
ucts.
In addition to this work she has
introduced several new products in
San Antonio. Her first demonstration
was held in the old Pancoast-Morgan
store where she demonstrated a fire-
less cooker.
Mrs. Askey says for one to become
a successful demonstrator it is most
essential to be pitient with customers

ucts. Mrs. Askey has won several
honors for the highest salr.s of dif-

For three years she has been con-
nected with the Mission Provision
'Company. She is the bouse demonstra-
tor for this company and also for the
International Refining Company. She
also has charge of the demonstration
work in all the branch houses for the
Mission Provision Company. Mrs.
Askey states thnt she is “tn love with
her work” and that she gets greatest
pleasure out of it when she has the
opportunity to demonstrate a new and
difficult product.

CHANGE IN WAY TO
PREPARE POTATOES
Sweet Potatoes an Gratin offer a
much-relished change from the “can-
died” way of preparing them. Get a
con of whole sweet potatoes slice them
and place them in layers in a buttered
baking-dish sprinkling each layer with
a little brown sugar flour and grated
cheese. Omit the flour from the top
layer. Add enough milk to cover and
bake until n delicate brown.
CHILLI CON-CARNE.
One No. 2 can baked beans. 1 cup
diced cooked beef or other meat d
tablespoons butter or meat fat. 2 can-
ned chili peppers or chilli powder 1
onion sliced 1 tablespoon sugar 1 tel-
spoon salt.
Melt the butter or fat and lay on the
onion and the miuced chilli peppers.
When the onion is browned add the
meat dice nnd heat them also. Add
canned beans and season all well
using chilli powder if pep|>ers are not
obtainable. Serve very hot. This is
particularly good if made from cold
roost beef or pork.
TOMATO KED RABBIT.
Two <yips of canned tomatoes one-
half pound sharp cheese grated. 1 egg
1 tablespoon butter 1 tablespoon
onion juice. 1 teaspoon sugar 1-4 tea-
spoon pepper. 1 teaspoon salt few
grains Cayenne toasted crackers. Sim-
mer the tomatoes with the seasonings.
Add the grated cheese removing the
saucepan from the fire. Stir until th
mixture is ejeamy. Add the beaten
egg and butter in tiny bits. Pour the
mixture over hot crackers.—From the

HEALTH MACAROONS.
Two tablespoons butter or other fat
one-half cup sugar two eggs oue-qunr-
ter cup cocoanut three-quarter cup
rolled oats four cup breakfast bran.
Cream fat and sugar ami add beaten
eggs and remaining ingredients. Drop
by spoons on greased baking sheet
bake 15 minutes in quick oven (4W
to 450 degrees' F.) Let stand a few
moments to harden before removing-

MACARONI WITH HAM.
Put in n butterod pudding dish the
boiled product in laye: i with minced
hnm. Season the ham with a little
mustard or finely chopped onion. Beat
one egg nnd mix with one cupful of
milk. Pour over all and bake in a very
hot oven for 10 minutes.

This is known as Piggly Wiggly No.
23 and will be. opened at 1-W7 South
Flores street Saturday morning Feb-
ruary 20.
Mr. Basse said the first Piggly Wig-
gly store was opened in San Antonio
February. 1018. This atore was sueh
u tremendous success that others were
rnpidly added and today there is a
Piggly Wiggly in practically every
neighborhood in this city.
The first Piggly Wiggly was opened
in Memphis in 1917. The stores have
grown until today there are 1950 stores
in the United. In fact the demand
today for new stores is so great that
they are being installed at the rate of
one a day over the country.
“The residents of San Antonio have
the advantage of the tremendous buy-
ig power and the low operating cost
of this concern. The great volume of
business done by the Piggly Wiggly
stores enables them to offer nation-
ally known products nt prices unhenrd-
of until the coming of this new era of
merchandise” says Mr. Basse.
Mr. Basse further states that as
the demand warrants additional Pig-
gly Wiggly stores will be opened and
preparations are now being made to
take care of needs of a growing San
Antonio. Mr. Basse says he believes

This set us thinking. We hnve from

of cultivating a sense of values. But

PINEAPPLE-RAISIN PIE.
Make an ordinary pic crust. Into
this pour the followitg fruit filling:
1 cup raisins.
1 cup sugar.
1 beaten egg.
1 tablespoon flour.
1 tablespoon finely shredded citron.
2 cups sliced pineapple.
Cook the raisins and the sugar to-
gether and then add the other ingred-
ients. Bake in a moderate oven until
