Strawberries
Strawberries are one of the fruits that do not
ripen once they are picked. Choose strawberries
that are completely red. White areas on the straw-
berries may turn red eventually, but they will lack
sweetness and flavor. Look for plump and well
rounded, shiny fruit with bright green, fresh look-
ing caps. Remove strawberries from the refrigera-
tor one hour or more before serving. Place in a
strainer and rinse under cool water briefly. Drain.
Place in the center of a terry towel, folding sides
in to cover berries. Gently pat berries and allow to
sit until ready to use.
Strawberries are loaded with vitamin C and con-
tain a good supply of vitamin A, iron, potassium
and fiber. And they are only 55 calories per cup.
Serving Suggestions:
• Fold together equal amounts of whipped cream
and sour cream. Spoon on serving plate; top with
whole strawberries.
• Marinate berries in a little Grand Marnier or
any orange liqueur.
• Melt 2 tablespoons butter. Stir in 1 cup choco-
late chips. Stir until melted. Dip the strawberries
and refrigerate for 15 minutes.
• Serve strawberries with a dollop of sour cream
and brown sugar. Dip each bite in the sour cream
and then the brown sugar.
• Whip 1 cup heavy cream until thick but not
stiff. Add 2 tablespoons powdered sugar and 1 cup
diced strawberries. Whip until cream stands in
peaks. Spread in the bottom of a cooked pie crust.
Top with halved strawberries.
* If it is necessary to store strawberries for several
days, place them in plastic containers with tight
fitting lids. Place a double thickness of paper tow-
els on the bottom of the container, between layers
of fruit and on top.

If berries are washed before re-
frigerating, they can become
water-logged if exposed too
long to water. It’s best to wash
them quickly, but gently just be-
fore using them.
Sweet Cherries
Choose Bing cherries that are plump, glossy and
a dark color (almost a burgundy color). Make sure
the stems are all still attached and that the stems
have not dried out.
Cherries are dull in appearance when overripe.
Store unwashed cherries in plastic bags in the re-
frigerator. Wash cherries just before serving.
Queen Anne cherries are pale yellow in color with
an orange tint to them. They are available for a lim-
ited amount of time. Even though they are expen-
sive, do hand pick a few choice ones for a special
treat.

Strawberry Cake
1 package white Duncan Hines Deluxe Cake Mix
3 eggs
1-1/4 cups water
1/3 cup canola oil
1 teaspoon almond extract
12 oz. jar strawberry preserves
2 baskets fresh strawberries
2 cups heavy cream
6 tablespoons powdered sugar
Combine the cake mix, eggs, water, oil and al-
mond extract and beat for three minutes with an
electric mixer. Grease and flour two nine-inch cake
pans. Pour batter into prepared pans and bake in a
preheated 350-degree oven for 25 to 30 minutes.
Place pans on racks to cool for 15 minutes. Re-
move cakes from pans and cool completely. Place
one layer on cake platter. Heat preserves briefly on
the defrost cycle of your microwave oven to soft-
en. Spread half of the preserves over bottom layer
of cake. Cover with sliced strawberries. Whip the
cream with powdered sugar. Place a layer of
whipped cream over strawberries. Top with top
layer of cake, preserves, sliced strawberries and

Look for bright, clean appearing berries uniform
in color. They should be plump and not dull look-
ing. Berries deteriorate rapidly. Arrange unwashed
berries in a single layer in a plastic container that
has a tight fitting lid, with paper towels underneath
as well as on top of the berries. This will help keep
excess moisture from spoiling the berries. Use as
soon as possible.

In a saucepan combine all ingredients. Cook over
medium heat 10 minutes. Press through a sieve to
remove seeds if using any berry other than straw-
berries. Refrigerate until cold. Use to top ice
cream, garnish with whipped cream and fresh
berries.
Ariel Allerkamp earns dual scholarship
First chair flautist Ariel formed in the four ensembles
Allerkamp of Comfort is one of making up the Hill Country

Hill Country Youth Orchestra
have to receive music and aca-
demic scholarships valued at
more than $200,000 from col-
leges and universities in Texas
and Indiana.
The awards go to young musi-
cians from Boerne, Comfort,
Fredericksburg and San An-
tonio. Other members of the or-
chestra are from Mason, Rock-
springs, Kerrville and the Hunt-
Ingram area.
Allerkamp will use a music
scholarship to attend Wayland
Baptist University majoring in
psychology with a minor in
music.
She is among 102 musicians
ranging in age from pre-school
through high school who per-
Youth Orchestras during 2001-
02.
The orchestras present at least
four concerts each year with
smaller ensembles making other
appearances. Monday rehearsals
are at the First United Methodist
Church in Kerrville, which co-
