carried his supply of milk in a

had separated into curd and
whey.
We needn't travel across the
desert for our cheese — it's avail-
able in great variety to consumers
who simply visit the supermarket.
Cheese one of the most highly
nutritious and palatable foods, is
one of tin fouls being highlighted
this month as "June is Dairy
Month'' promotions throughout the
country bring prices down to a
level shoppers find irresistible.

CANADIAN CHEESE SOI T
2 tablespoons butter
; 1 1 cup chopped onion
• 2 tablespoons flour
1 tablespoon cornstarch
1 S teaspoon paprika
1 2 teaspoon salt
1 8 teaspoon pepper
I 1 cup milk
| 2 cups chicken broth
] t up diced cooked carrots
II I cup diced cooked celery
: to 1 oun. cs sharp process Ched-
dar cheese, diced
; 2 tablespoons clwpped parsley
Saute onion in butter on Burner
| with a Brain set at medium flame
at 200 tlegi'ccs until onion is soft.
Mix flour, cornstarch, paprika,
salt and P' PI* r. Blend into but-
ter mixture Gradually add nillk
and chicken laoth and stir while
'cooking until th'ckened. Add vrgo
tables and C'«)k, stirring occasion-
ally for 15 minutes. Add cheese
and stir until cheese melts. Gar-
nish each serving with chopped
parsley. Makes four to six serv-
ings.
01 ICK CHEESE SAUCE
2 tablespoons butter
2 tablespoons flour
1 cup milk
Salt to taste
1 cup grated Cheddar Cheese (or
2 to 1 ounces sliced cheese)
Melt butter in saucepan over
low flame, then blend in flour.
I Add liquid, stir and cook until
sauce is thick and smooth. Add
| salt and cheese, remove from
heat and stir until cheese is
melted. Serve over spinach and
other green vegetables.
