The Jewish congregation of the 68th
Street Chapel dedicated anew kosher
kitchen the largest such Army kitchen in
the United States at their chapel on April
26.
This kitchen built into the back of the
chapel will be operated by volunteers to
serve lunch and meals for special re-
ligious occasions for Ft. Hood soldiers
whose faith requires meals prepared ac-
cording to Jewish dietary laws.
The Jewish laws require meals to be
prepared in a manner not possible at
Army dining faciliites. Previously these
soldiers had to severly limit what they ate

Now they can have at least one meal a day
that is kosher.
Some cooking has been done at the 68th
Street Chapel in the past however this
was only refreshments for the 15 to 30 peo-
ple who attend the Friday evening
facilities for more cooking.
There are more than 300 Jews at Ft.
Hood. The kitchen will not be serving all of
them. Most live off-post and can prepare
their own meals. Others are assigned to
units too far from 68th Street to visit the
chapel for lunch. Those who do get their
lunches from the chapel can eat in a small

New Kosher kitchen is dedicated
dining area beside the kitchen or take it
with them in a paper bag.
The kitchen occupies former office
space at the rear of the building. Civilian
contractors removed the office walls re-
painted the area then installed anew ceil-
ing lights floor tile a sink and formica-
topped counters. Ft Hood’s Directorate of
Facilities Engineering (DFE) bought new
dining facility equipment and refurbished
old equipment for the chapel.
This equipment included two old stoves
anew and old freezer a fromer dining
facility refrigerator blenders toasters
and a dish washer. A congregation
member contributed anew micro-wave
oven.
Just getting permission to have a
kitchen proved complex because chapels
are not normally supposed to have dining
facility equipment. With help from the 13th
COSCOM Commander and authorization
from the Ft. Hood Commander an excep-
tion was made for this chapel.
Construction began in January. By mid-
March the contractors and the DFE
transformed some offices into a kitchen
but the work was not done. Before the
kitchen could be used it had to be
kosherized.

This is identified by a “K” or “U” with a
circle around it marked on the package to
notify the consumer that the product was
prepared in a kosher manner.
It was finished just in time for
Passover (March 31)” said Spec. 4 Leyla
E. Kreksler 68th Street Chaplain’s Assis-
tant. “We had frozen food sent in from
Dallas TV dinners specially prepared for
Passover.” These were cooked for about
60 people. Traditional foods were also pre-
pared.
All equipment in the kitchen is separat-
ed into three areas to be used for the three
different types of kosher food. Meat dairy
products and pareve (all others) are
stored cooked and eaten separately. The
equipment and utensils used to cook one
food cannot be used for another. Even
cleaning materials are isolated into meat
dairy and pareve categories.
“Food is not just something you eat”
notes Leyla. “It’s symbolic of other
things.”
“Take for example the painless way that
animals are killed” explains Rabbi Asher
echert 68th Street Chaplain. It
Heightens one’s sensitivities to certain
ethical values.”
Kosher lunches are served regularly
from 11 to 1:30 p.m. at the chapel. The
kitchen’s services are available not only to
Jews but also to personnel of other faiths
whose laws require kosher food.

modern facility available to them the team
of the 48th Med. can provide necessary
pharmacy X-ray and laboratory services.
The facility built in 1871* is located direct-
ly across from the airfield. This in itself is
a major asset. It makes it easier to move
patients to and from the two lifesaver
aircraft which support the 48th Med.
group.
The two lifesaver aircraft will be used to
bring patients in from field sites. Also If at
any time a patient needs medical care in
addition to that which can be provided by
the 48th Med. team the helicopter will
transport the patient to a civilian hospital
over 100 miles away
