IMPORTANCE OF DIETICIAN AND
FOOD FOR PATIENTS STRESSED IN
HOSPITAL HOSPITAL CARE OF SICK
By H. D. MOUZON
From a human being's first day
on earth to his last, from the
cradle to the grave, no matter
how many years may intervene,
one of the prime essentials of life
is food. With food in proper pro-
portions and of the right kind he
has an excellent opportunity to
live. Without food he dies. It's as
simple as that.
Important as it is that the
healthy individual receive the
proper food in proper amounts,
it is many times more important
that the person who is ill be giv-
en carefully selected and pre-
pared food to assist the body in
its fight against disease When
this ill individual is receiving
treatment in a hospital the job of
seeing to it that he g6ts the
proper food, after it has been pre-
scribed by a physician, belongs to
the dietary department of the
hospital. It's not difficult, then,
to arrive at the conclusion that
this department is of utmost im-
portance to the patient, whose
chief desire is to get well, and to
the physician whose life is dedi-
cated to the healing of the sick.
When many people are housed
in one institution, food service
must be organized and planned
if all are to be adequately fed;
and when the majority of indi-
viduals must be served in bed
because of abnormal health and
require special consideration of
diet, the need for careful consid-
eration and planning is even
greater. In earlier hospitals the
preparation and service of food
were supervised by the chef, the
housekeeper or the nursing de-
partment. Later, as hospitals grew
and medical techniques developed,
it became necessary to give great-
er and more professional attention
to diets. Thus, in 1899 at a Na-
tional Home Economics Confer-
ence at Lake Placid, New York,
the above mentioned fact was rec-
ognized and persons specializing
in foods were given the title,
"dietitian." In 1917, meeting at
the same place, the American Di-
etetic Association was formed by
a group of 59 dietitians, and by
1955, membership in the organi-
zation had grown to approximately
11,000. Meanwhile, hospitals and
medical authorities had come to
realize that patients' diet resuire
not only skill in cooking but scien-
tific preparation and management
as well and that only well trained
! dietitians could meet the need.
The American College of Surgeons
in its Manual of Hospital Stand-
ardization, recognized the impor-
tance of the dietitian by stating
that every approved hospital re-
quires a well organized dietary
department with a well-qualified
dietitian at its head.
The function of the dietary de-
partment is to provide the best
possible food at a cost consistent
with the policy of the institution.
To attain this goal, the director
of the department establishes
standards for planning menus,
preparing and serving food and
controlling meals. It is also the
director's responsibility to assist
in budget planning and control,
purchasing and record keeping.
Oood food, as inferred previous-
ly, is important in the treatment
of the patient and is part of his
total care. Science has proved
(that adequate nutrition hastens
the recovery of patients. All these
facts emphasize the important
role of the department whose re-
sponsibility is to prepare this
food. It is also true that hospital
administration recognizes the pub-
lic relations value of good food
offered in variety, well prepared
and attractively served. The di-
etary department of all good hos-
pitals, and this category includes
McKinney's City-County Hospital,
ore constantly striving to improve
their service to patients and thus
hasten the recovery of those who
are ill.
The dietitian works closely
with the physician and with the
nurse in that it is her responsi-
bility (o see to it that orders rel
ative to the patients' food are
carried out to the letter. The
nurse, too, has a resonsibility here
and she and the dietitian must
work together closely and in har-
mony if desired results are to be
obtained. Special trays will always
be the nurse's concern since they
are of diagnostic and therapeutic
value and she must cooperate
with the dietitian in preparing
and serving these in many in-
stances.
The excessive patient load car-
ried for a long time by City-
County Hospital has made it ex-
tremely difficult for the dietary
department with its crowded quar-
ters to do the job il would like
to do. In spite of this handicap,
however, this department, under
the capable direction of the dieti-
