Rhubarb Pie.
Wash and dry rhubarb and cut
up into inch pieces without peel-
ing skin off. Line pie tin with
rich paste, and sprinkle bottom
crust with Hour. Put oue full
layer of rhubarb into crust, then
one-half cup of ^uvar. This pre-
vents the pie from being tocf juicy.
Put on the upper crust and pinch
the edges firmly together.
Ginger Bread.
One cup of sugar, one cup o.
butter and lard, two cups Orleans
molasses, one teaspoonful soda,
one teaspoonful ginger, two tea-
spoonfuls of cream tartar, two
eggs, one cup milk; Hour to stiffin.
If you wish them with crusts line
pie pans with pie crust and fill
with ginger cake dough. This
will make five or six cakef»
Jolly Boys.
Sift two and one-half table-
spoonfuls of white flour, one
tablespoonful of sugar,, one salt-
spoonful salt and one teaspoonful
of hakibg powder. Beat one egg
and add to the dry mixture with
enough lhilk to make a drop bat-
tar; stir in a teaspoonful of melted
butter. Beat well and drop small
spoonfuls into boiling lard, cook-
ing carefully. Flat with syrup.
Escolloped Tomatoes.
One quart of fresh or canned
tomatoes, one pint of bread
crumbs, two" tablespoonfuls of
butter, two of sugar, a small
teaspoonful of salt and one-
fourth spoonful of pepper. Cut
a layer of tomato in a bake dish.
Sprinkle with sugar, salt and pep-
per; now put over a layer of
crumbs, then bits of butter; con-
tinue this until all the material
is useel, having ( rambs as the last
layer. If fresh tomatoes are
used, bake 45 minutes, but if
canned, only ou^-half hour.
