TURKEY CHILI

Large Onion, Chopped
Medium Garlic Cloves, Minced
Medium Carrots, Thinly Sliced Into Rounds
Pound Lean Ground Turkey
Tbsp Chili Powder
Tbsp Paprika
Tsp Ground Cumin
1/2 Tsp Red Pepper Flakes
2 Medium Tomatoes, Chopped
1 Cup Canned Tomato Sauce
1 Cup Fat-Free Chicken Broth
1 1/2 Tbsp Apple Cider Vinegar
11/2 Cup Cooked Kidney Beans,
Rinsed And Drained
1 Medium Bell Pepper, Chopped
1 /2 Tsp Table Salt, Or To Taste
1 /8 Tsp Black Pepper, Or To Taste
NSTRUCTIONS:
1) Heat a large pot coated with cooking spray over medium heat.
2) Add oil and onion then saute onion until soft. Add garlic and carrots and cook until garlic is
softened.
3) Add ground turkey and brown the meat about 5 minutes. Make sure to stir the turkey to break
up lumps.
4) Add chili powder, paprika, cumin and red pepper flakes, tomatoes and tomato sauce, broth
and vinegar.
5) Bring to a boil and reduce heat. Cover and simmer until meat is tender, 30 to 45 minutes.
6) Add beans and bell pepper. Simmer uncovered until peppers are done, about 10 minutes.
Season to taste.
Yields about 1 cup per serving. Submitted by Robyn Dunaphin.

The Greensheet and VOLUNTEER HOUSTON collaborate to bring you the following
• information on volunteer opportunities for young people.
EARLY RISERS will be needed the morning of March 10 as volunteers at a fun run beginning
• in front of Houston's City Hall. If you're willing to get there around 6:30 a.m., you can assist
with setup, registration, or any of a number of assignments during the run. Proceeds will
• benefit local park improvement projects. In return for your time, you'll be treated to free
refreshments and a commemorative t-shirt. Volunteers should be at least 16 years of age.
MAKE EASTER CARDS for an agency sponsoring visits to institutional shut-ins in connection
with a number of holidays throughout the year. The next visits on the schedule will take
place April 7 in celebration of Easter. Having handmade greeting cards to share with the
• persons visited will help make the occasion all the more special for everyone involved. You
f can make the cards at home and deliver them at your convenience to the agency's Galleria
area office. No minimum age is involved, and this can be a great project for individual
• volunteers, families, or organized groups.
• REALLY DIG IN as a volunteer at community garden used to produce vegetables for
• organizations serving the needy. The sponsoring agency will teach you all you need to know
_ to seed, weed, and feed a garden successfully. Your commitment can be short-term or
ongoing and the hours are very flexible. There are a community garden sites throughout
• Houston from which to choose. Minimum age: none, if able to do the work needed.
® TEENS HELP TEENS through a crisis hotline operated by a United Way agency. Between 5
0 p.m. and 9 p.m. on weekdays and weekends, teenagers staffing this hotline handle calls on
_ subjects as varied as substance abuse, school problems, and suicide. Extensive training is
• conducted by social work professionals. If you are a good listener between the ages of 15 and
0 19, think about taking on a weekly phone shift at an office in central Houston or Clear Lake.
CAT LOVERS are invited to participate in the pet adoption process for an all-volunteer animal
welfare organization. On Saturdays or Sundays you'll staff an adoption station at a local pet
supply store, helping visitors select pets and completing the necessary paperwork. There are
several locations from which to choose. Your time commitment can involve just one or more
shifts per month. Minimum age for volunteers: 13 if accompanied by an adult, 16 otherwise.
FOR SELF-STARTERS: Organize a garage sale, with proceeds to be donated to your favorite
charity.
