there Is no scientific reason why
horse meat should not be eaten It
Is sweeter than beef but coarser
heavier stringer and darker Most
of It Is cut from the carcasses of
horses which ore too old to work
and which bring from S3 to 0 a-
head Most of the meal Is sold
as animal food chiefly to zoos
About four ounces of horse meat
constitute a human meal
