16 Oz. Well-Trimmed Beef Sirloin,
1 Tsp. Ground Cumin
Cut Into Thin Strips
2 Tsp. Fajita Seasoning
2 Small Onions, Thinly Sliced
8 Small Flour Tortillas
2 Small Green Bell Peppers,
Seeded And Cut Into Thin Strips
SPECIAL
[INSTRUCTIONS]
Top with shredded
lettuce, chopped
tomato, and light
sour cream.
You may also grill
the beef on a gas or
charcoal grill.
INSTRUCTIONS:
1) Spray large nonstick skillet with nonstick spray and heat skillet to
medium high heat.
2) Add beef and cook, stirring, until browned. Transfer to plate and set
aside.
3) Add onion and pepper strips to same skillet; cook, stirring, until
softened (about 2-3 minutes). Add beef and cumin, continue to cook
until beef is cooked through (about 1 -2 minutes).
4) Microwave tortillas just until warmed, set on plate and top with fajitas!

• The Greensheet and VOLUNTEER HOUSTON collaborate to bring you the following
m information on volunteer opportunities for young people.
• RAIN OR SHINE, Houston's new Weather Museum offers volunteers a stimulating array of '
• assignments. The only museum of its kind in the nation, this Hermann Park area
• institution features gadgets, displays, and interactive exhibits bound to fascinate young
and old alike. Volunteers can serve as tour guides, staff the front desk, or assist in the
• gift shop. Three-hour shifts are available Tuesdays through Sundays during daytime
• hours. Assignments are available for persons 16 or older.
• FIGHT HUNGER by participating in the Fifteenth Annual National Association of Letter
• Carriers' Food Drive on Saturday, May 12. It's easy: simply collect and bag any non-
perishable food items; then place your food donation by your mailbox that Saturday
• morning. Your letter carrier will pick it up and deliver it to an organization serving the
• needy. Watch for a notification letter from your letter carrier prior to the day of the drive.
• HOME REPAIR and yard maintenance volunteers are wanted by an agency that provides a
0 broad range of services to low-income families in an area just southeast of downtown.
Some of the agency's projects require professional level skills but many do not, and some
• are appropriate for youth involvement- either individually or in organized groups, down
^ to age 14. Projects are available on weekdays and Saturdays.
^ CELEBRATE MOTHER'S DAY one day early by joining with other volunteers in a visit to
local nursing homes on Saturday, May 12. If you have some time available that morning,
• plan on coming to one of three meeting places (near the Galleria, Willowbrook Mall, or in
£ Kingwood) and teaming up with other volunteers to visit one of several scheduled
facilities. You'll be given handmade Mother's Day cards and other goodies to share with
• the persons you visit. As long as each volunteer's transportation is arranged for, there's
^ no minimum age to participate.
WILD AND WACKY automobiles will be featured at the annual Art Car Parade to be held
downtown on Saturday, May 12, and at a party at an east Houston cultural center the
following day. You can play a central role in these celebrations of color, chrome, and
craziness by helping with setup, directing the public, and assisting with various other
activities connected with the events. In return for your time, you'll be treated to free
refreshments and some great entertainment. Volunteers should be at least 15 years of
age.
FOR SELF-STARTERS: When hot summer weather settles in (which won't be long now) you
could set up a lemonade, iced tea, or frozen Kool-Aid stand, and donate the money you
make to a good cause.
