VALUE OP WORK
IS EASILY SHOWN.
The value of the work as it is stressed
ih the College of Industrial Arts lies
in its practical preparation for life in
the home and for its educational and
cultural aspects which develop through
consideration of subjects taught In the
light of applied science.
The number of students who took
courses during the session of 1918-191J
was 324. and during the session of 1913-
1914 was 4U. while the number who
have already enrolled for these courses
for the current session is 444. On ac
count of Inadequate laboratory equip-
ment and facilities the courses In do-
uirsiic launaenng one or the most im
portant courses in the department hag
not Deen satisfactorily and efficiently
given. The present equipment for this
course permits only a limited number
of laboratory periods and limits the in-
struction to inefficient laundry processes.
In order that .. domesticlaundering may
be taught thoroughly including the edu-
cational the scientific and the practical
aspects of the course it is recommended
that a properly equipped laboratory be
provided.
There are many bright energetic am-
bitious young women of Texas both on
the farms and In the cities who are
interested In co-operative cooking cater-
ing management of lunch rooms and in
various other kinds of institutional work.
Many applications have been made to
the College of Industrial Arts for in
struction and training of this kind and
u is evident that the offering of a
course in institutional cookery would
meet at once a popular demand that
has existed for several years for such
work. Many worthy young women" w ho
are largely dependent upon their own
ertorts ana labor tor a livelihood would
at once take advantage of the oppor-
luiuuea prvviueu.
NEW COURSE """"
NEEDED AT SCHOOL. .
For the course in institutional cookery
an especially equipped laboratory for
cooking In large quantities as well as in
small amounts would be necessary. It
would require tha a suitable room lt
set apart for this purpose with a large
range sinks and the Usual laboratory
conveniences together with large cook
ing utensils and food containers also
steam cooking apparatus such as 13 used
111 me preparation of food in larire nimn.
titles. The course with the equipment
would be of great value to the collec
and would extend the services of the
couege in me interest of a worthy and
deserving class of young women who
rrerjuentiy experience f.reat difficulty in
obtaining honorable and safe rmnlnv.
ment by which they can care for themselves.
