CULAK LODGE NO. 165
Moulton. Texas
Dear Membérs:
My sincere intention was to write a
longer letter to the Věstník but síňce
time does: not permit me to do this
pleasure right now, I sílali only statě
the most important that was requested
of me.
Fellow-members of Culak Lodge,
please notě that the August and the
September meetings are to be held the
first Sundav of these two months be~
cause the second Sundays conflicted
with local American Legion and the
Catholic annusil festivals, respectively.
I hope to be able to write more before
fong.
Sincerely,
Rose Helweg1, reportér.

Dear Girls:
For tho.se of you who love to can, may
1 recommend to you a recipe for crisp
watermelon pickles. With the water-
melon season all too brief, now is the
time to be foresighted and make these
fiue pickles for winter, First, gather to-
gether: I watermelon (5% Ibs, rind)/
4 tablespoons salt; three tablespoons
powdered alum; dYs lbs) (11 cups sugar);
2 cups of white vinegar; 1 Vá tablespoons
whole cloves; 6 blades mace (I ušed 3
tablespoons ground mace instead) 3
sticks cinnamon. Now — cut rind in 2-
inch chunks or triangles. Weigh out
5Yz pounds or measure 4 quartsi of rind,
add salt and 4 quarts of cold water. Let
stand in kitcliem overnijght.
Next: Drain and rinse well. Add alum
and four quarts water. Cook to a boil,
reduce heat, simnaer 30 mimiutes. Drain
and rinse. Simmer in four quarts water
until tender, about 45 minu tes. Third
step: — Water should cover rind, and
more as needed. Add sugar and cook
břinkly uíntil rind looks transparent.
Takés about 45 minutees. Now add vine-
gar and cook 25 minutes more. Finally:
Toss in all spices and cook 5 minutes
only. Longer cooking darkens the syrup.
VĚSTNÍK — WEST, TEXAS
Pack into 6 sterillzed pint jars along
with spices and syrup, Seal Store two
weeks before using.
Notě: In preparing rind — Remove
most of the pink fruit from watermel-
on rind; a little rim of pink makes
your pickles prettier. Cut all outer green
skin from rind,
This is an excellent, crisp, watermel-
on pickle, that is so cHlightíiu to eat
as well as decorative on your board.

IT’S TIME TO FICICLE PEACHES
Peaches are not too plentiful this
year in most seetions of Texas, because
af the blossom killing frost that came
and because many of our trees died
out in the sovou years of drought. In-
[Sects, too, damaged many trees so that
the crop is very limited but pickied
peaches are popular, especially a.s a rel-
ish and e asy to put up at horné. Make
I yourself a few pints for your pantry
shelf.
The directions for making six pints,
pickied peaches cail for eight pounds
of smáli or medium peaches without
blemishes, ripe but firm enough to hold
itheir shape in cooking. Other ingre-
d.ients; 2 tablespoons of whole cloves;
8 two-ineh pieces of stick cinnamon; 2
pounds sugar; on e quart vinegar.
First, make the syrup mixture by
cooking together the sugar, vinegar and
spices for 10 minutes. (Háve them tied
loosely in a clean. thin white cloth so
that they ean be removed easily later.
Savé out enough cloves to plače two in
each peach, if desired.) Wash and pare
the peaches, stick cloves in each, add to
the syrup and cook slowly until tender
but not broken. Let stand overnight,
Next morning, remove bag of spices.
Drain syrup from peaches. Boil rapidly
until thickened. Pack peaches in clean.
hot sterile jars. Pour hot syrup over the
peaches, filling jars to top. Seal tightly
Keep in a cool plače severál weeks be™
tore serving, to biend ťne ílavor.
