Pennsylvania.
The following recipes are excerpted
from tne new cookbook.
Braided Bread
(Babovka)
1 cake yeast tor 1 enveiope)
2 teaspoons sugar
1 cup boiied milk
6 cups fiour
1 can (12 ounces) evaporated milk
1 tabiespoon butter, melted, plus
addítional for topping
2 egg yoiks, beaten
3/4 teaspoon salt
in a large bowi, dissolve yeast and
sugar in warm milk, adh sifted flour
and mix. Set in "warm plače and allovv
to rise for 10 minutes. Add warmed
evaporated milk, 1 cup warm water,
butter, egg yoiks and salt. Knead thor-
oughly, cover, and set in warm plače
free of draft. Let dough rise for 2
hours. Separate dough into 3 portions.
With you hands, form each piece into a
rope-like shape, approximately 12
inches lortg by 1 inch diameter. Cover
and let stand for 15 minutes. Braid,
plače in buttered pans. Allow to rise
until doubled in bulk, for about 30
minutes. Preheai oven to 350 degrees
F. Brush with melted butter. Bake for
10 minutes. then raise temperature to
375 degrees F and bake for 1 hour.
Makes 20 servings.

Dumplings
(Halušky)
3 1/2 cups flour
Dash of salt
2 large egg yoiks
ín a large mixing bowl, add flour
and salt, and mix. Add egg yoiks and
slowly add approximately 1 cup water
while mixing, taking care that dough is
thin, but not w'atery. Plače dough on
board. Add 3 cups water to large pot
and bring to boil. Dip butter knife in
boiling water and eut smáli pieces of
dough and push into boiling water.
Dumplings are doně when they float
on surface of water. Drain in colander
and rinse in coid water to prevent
stieking. Serve with butter and/or
poppy seeds, boiied cabbage oř cottage
cheese and bačou bits. Makes 4 serv-
ings.

Saked Goose
{Pečena Hus)
1 medium goose, thoroughlv washed
(remove organs)
1 tabiespoon salt
Dash of caraway seeds
1 cup sour cream
Plače the goose in a large pan,
sprinkle salt uniformly over the goose
and refrigerate for 4 hours. Preheat
oven to 350 degrees F. Add 2 cups
water, and sprinkle caraway seeds over
goose. Bake for í hour. Discard
water, cover goose with sour cream,
raise oven temperature to 400 degrees
F and bake for 20 minutes. Serve with
rice. Makes 8 servines.

for the XXVIII SPJST Convention
Arrangements háve been made with

rooms for those attending the SPJST
XXVIII Convention.

1, 2000. Anyone who needs a room
