Mf Glased Luncheon Meat
1 can luncheon meat
1/3 cup crabapple or currant
jelly
2 teaspoons prepared horse-
radish
Cut luncheon meat into eight
slices and place in shallow ball-
ing dish. Mix jelly and horse-
radish and spread on meat slices.
Bake in a 400 deg' F. oven for
20 minutes. 4 servings.
Versatile Luncheon Meat ~
Canned luncheon meat is ver-
satile summer meat selection.
Besides serving as- the main
course for luncheon or dinner, it
can be prepared for appetizers
and summer luncheon salads.

“Lucky 7 Sandwich
2 slices buttered bread !
2 slices Swis’s cheese
2 lettuce leaves
2 slices tomato
2 slices cooked turkey
2 slices hard-cooked egg
2 slices crisp bacon
Place buttered slices of bread
on a luncheon plate. Top with
cheese, lettuce, tomato, turkey
and eggs in the order listed.
Place bacon at the side. Cover
with Thousand Island dressing or
serve dressing separately. Makes
one sandwich.

Those who like the nippy fla-
vor of blue cheese will be partic-
ularly fond of these blue cheese-
luncheon meat hors d’oeuvres.
Serve them with a variety of ap-
petizers,. including two or three
relatively mild ones. Prepare
them ahead of time and then pop
them in the oven just before
serving.
Blue Cheese-Luncheon Meat
Hors d’oeuvres
1 can luncheon meat
■2 cup blue cheese, crumbled
(1 4-oz. pkg.)
2 tablespoons prepared must-
ard
Cut luncheon meat into 8
lengthwise slices. Mix cheese
with mustard and spread over
slices .Broil 3 inches from the
source of heat until the topping
is hubbly and lightly browned,
about 5 minutes. Cut each slice
into 8 pieces and serve hot on
cocktail picks. 64 hors d’oeuvres.
Summer Salad
A summer luncheon idea that’s
a breeze to fix is avocado-meat
salad made with diced canned
luncheon meat. It can be served
in lettuce cups' for individual
servings or it can be made an at-
tractive center of interest on a
bed of crisp greens on a cold cuts
tray. Here's the recipe:
Avocado-Meat Salad
1 can luncheon meat, diced
*/i cup diced celery
1 teaspoon grated onion
2 ripe avocados
Lemon juice
Salad dressing or mayonnaise
Mix luncheon meat, celery and
onion. Peel and dice avocados;
sprinkle with lemon juice to pre-j|
vent discoloration. Combine care-
fully with the meat mixture. Add ]
enough salad dressing to moisten.
Chill, if you wish. Pile into crisp !
