imaginative ways, from a favorite chicken
salad to such famous international delights
as Italian Tuna Pie Duck and Onion Salad.
It's low in calories, low in fats — what
more can you ask for?

Mushroom Salad, Ratatouille, or Pesto

2 tablespoons oil
Vi cup chopped onion
3 medium carrots, sliced thin
Vi large green pepper, diced
1 clove garlic, minced
'A cup tomato sauce
Vi teaspoon oregano
Vi teaspoon basil
Va teaspoon pepper
'A cup sliced ripe olives
2 (7-ounce) cans water-packed solid tuna, drained
and flaked
1 (9-inch) pie shell, pricked and prebaked 5 minutes
in 425 degree F. oven
2 large tomatoes, peeled, cored, and sliced thick, or
1 (141/i-ounce) can sliced tomatoes, drained
Va cup Mayonnaise (light)
Va cup grated Parmesan cheese (preferably freshly
grated)
Heat the oil in a large skillet. Add the onion,
carrots, green pepper, and garlic. Cook over
medium heat, stirring occasionally, about 15
minutes, or until carrots are crisp-tender. Add the
tomato sauce, oregano, basil, and pepper. Cook
and stir until thickened. Remove from heat and
gently stir in the olives and tuna. Spoon into the pie
shell. Bake 25 minutes at 400 degrees F. Remove
from oven and arrange the tomato slices, slightly
overlapping, on top. Carefully spread a mixture of
the Mayonnaise and Parmesan over the tomato
slices, sealing the pie crust edges completely. Bake
another 10 minutes. Serve at room temperature.

Lettuce leaves
2 large Bermuda, Spanish, or red onions, sliced thin
3 cups diced or slivered cooked duck (or chicken)
Va cup French Dressing "
2 tablespoons Mayonnaise
2 tablespoons orange juice
Grated peel of 1 orange
Minced parsley (for garnish)
Line a salad bowl with lettuce. Put half the
onions on the lettuce, add half the duck, and re-
peat. Combine the French Dressing, Mayonnaise,
and orange juice and peel and mix thoroughly.
Pour over the salad. Garnish with the parsley. Serve
at room temperature. Serves 6.

1 medium cucumber, peeled, seeded, and chopped

2 large or 3 medium tomatoes, peeled and coarsely
chopped
Vi teaspoon salt
2 tablespoons ketchup
