FOODS TO REMEMBER
Here are some more well
planned cool eating summer
menus.
For added proteins, use
sliced hard-cooked eggs in the
salads and/or as garnishes for
cold fish dishes, cold cuts of
all kinds. Add diced hard-cook-
ed eggs to spinach, sorrel
greens or beet Borscht! Fill
green bell peppers (cut in
halves lengthwise) scooped out
tomatoes or cucumber boats
(cucumbers, unpared, cut
lengthwise and seed portion
removed with a teaspoon) with
egg salad. Top with sourcream
or mayonnaise just before ser-
ving time.
If your family demands meat
dishes on hot days, make use
of your electric broiler (if you
own such a handy bit of equip-
ment) or make a charcoal braz-
ier out of an old tin pan cov-
ered with a broiler rack. Broil
spring chicken, lamb chops,
beat steaks or hamburgers. Or
try the following “imported”
method of serving bits of meat
on skewers. They are known
by various names, depending
on country of origin. “Shish-
kebabs,” “Shashlik,” or as the
Romanians sa.y it, “Frigarui.”
By any name, all you need do
is have the filled skewers ready
in the refrigerator or freezer.
Then proceed as follows:
Broiled Kebabs
Frigarui, you Rumanians!
8 one-inch cubes of lean beef
or lamb per skewer
3 egg tomatoes cut in halves
7 pieces green pepper
1 teaspoonful vinegar
1 tablespoonful lemon juice
1 tablespoon sherry, optional
1 tblspn. dark brown sugar
I A dash of cayenne, pepper or
paprika. Papaya meat ten-
derizer, optional
Put the cubes of meat in the
refrigerator for an hour be-
fore arranging them on metal
or wooden skewers for broiling.
Place a half tomato (cut thru
center lengthwise) between
pieces of green pepper and
meat cubes so that meat cubes
are first and last on the skew-
er. Combine vinegar, lemon

Serve hot. Make as many
skewersful as servings requir-
ed, using the above propor-
tions for best results.

Rabbi's Martyrdom Filmed
MEMORIES OF HITLERISM, which was destroyed just a decade
ago, are contained in a filmstrip, "Leo Baeck: Man of Faith created
by the Union of American Hebrew Congregations. Strip tells story
of the courageous chief rabbi of Germany, Dr. Leo Baeck, who
endured martyrdom, inspired fellow-victims of Nazism and sur-
vived to become symbol and source of a living Jewish faith. Above
is one film’s 38 frames, showing Dr. Baeck being led into the dread
concentration camp, Theresienstadt. Filmstrip was written by Dr.
Friedrich Bodnitz, a personal friend and onetime parishioner of
Dr. Baeck; it was produced by Samuel Grand.
