Easter Sunday was a wonder-
ful day. We had an overflow
crowd at our church and the
Easter Musical was wonderful.
Everyone in the choir and the
persons who portrayed the
people in the Bible did a won-
derful job. If those who at-
tended were not blessed, I don’t
believe they could be blessed.
One of the recipes below is by
request, I’m not a liver person.
The other I just plain like.
Liver and Onions
1 lb. thin sliced calves’ liver
1 large onion, thinly sliced
1/4 cup flour
Salt to taste
Cayenne Pepper
1/4 cup water
4-6 tbsp. vegetable oil
Season thin slices of liver with
cayenne pepper; dust with flour.
Heat oil in large skillet until
very hot. Quickly pan-fry liver
lightly browning on both sides
(DO NO OVERCOOK). Re-
move meat to a heated platter
and keep warm. In pan drip-
pings fry onions until browned,
add 1/4 cup water. Cook 2 min-
utes. Return liver to pan and add
salt to taste. Serve immediately.
Pigs in a Blanket
2 pkgs. crescent rolls
Prepared mustard
32 miniature smoked sausages
1 egg, beaten with 1 tablespoon
water
Sesame seeds.
Open rolls. Pitch to seal perfo-
rations. Separate each pack into
4 rectangles. Spread lightly
with mustard. Cut each rect-
angle into 4 long strips. Roll
each sausage into strips of
dough. Place seam side down
on ungreased cookie sheet.
Brush with beaten egg mixture.
Sprinkle with sesame seeds.
Bake at 375 degrees for 10 -15
minutes until golden brown.

Tenaha Middle School Beta
Club excels at State Convention
The Tenaha Middle School
Jr. Beta Club recently attended
the State Convention in Dallas,
Texas where they came back
big winners.
Danielle Mohr was elected
as the 2003-2004 State Secre-
tary. She and the club will be
traveling to Nashville, TN this
summer where she will com-
pete for the office of National
Secretary.
The campaign skit that the
club performed to help get
Danielle elected won first place
at the state level. The motto for
the skit was Lucky 7. The stu-
dents will also be performing
this campaign skit again this
summer in Nashville.
The students worked very
hard building a toothpick
bridge for competition. This
bridge was made only of tooth-
picks and hot glue had to be
able to hold at least 50 pounds.
There were only 2 bridges that
held the 50 pounds. Tenaha’s
bridge came in second place
because the other school’s
bridge weighed less. The stu-
dents building the bridge were:
Alan Fanner, Amber Christian,
Wade Bowlin, Gabe Fleming,
Steven Anderson, and
Stephanie Stiles.
The club also competed in
the Songfest Competition. To
participate in this event the club
had to sing and dance to a song
that they had written to fit the
theme “On Track With Beta”.
The club placed second in this
contest.
Emily Bowlin competed in
the Special Talent Division. She
performed “Where Would You
Be” and placed 4th.
The club compiled a scrap-
book of the year’s activities.
Tenaha’s scrapbook placed 5th.
Sara Watson entered the
Teacher Appreciation category
by designing a T-Shirt and she
placed 4th.
Amber Christian entered the
Wreath contest. She followed
the theme “On Track With
Beta” and placed 6th.
Gabe Fleming entered the
Photography contest and placed
6th with his picture.
Stephanie Stiles entered the
Essay contest. Her essay was
entitled “On Track With Beta”.
She placed 5th.
The club also entered the
Science competition. They had
to design an arch and build it
out of newspaper and tape only.
The team placed 5th. The team
members were: Amber Bowlin,
Amber Christian, Gabe
Fleming, and Sara Watson.
Alan Farmer served as this
year’s Chaplain.
