tenants of the pig parlor have
their own type of “air-
conditioning*. On warm days,
they are cooled by a constant
fine mist.
At the processing plant, which
is spotless, even in the 'kill*
room, for the meat la handled
completely indoors, there are
many time-string electrically
operated pieces of equipment to
produce the finest meat pro-
ducts possible. There are
electric hoists on overhead
tracks to move the products
from any place in the plant to
any other room, the cooler
rooms, the quick freeze, the
cutting block, the pork process-
ing table, etc.
You will be interested to
know that tha cured pork is
handled in separate quarters
from the fresh meat, and even
has a separate cooler to insure
that there is no possibility of
mixing flavors. They have two
smoke houses, thermostatically
controlled, to keep them at
different temperatures tor ths
hickory - smoked hams, bacon
and sausages that are so de-
licious thay are having a hard
time meeting the demand tor
them.
