Vitamins arc essential nutrients our body needs in small
amounts for various roles in the human body. There are two
groups of vitamins: water-soluble (B-complex and C) and fat-
soluble (A, D, E apd K). Water-soluble vitamins need regular
replacement but fat-soluble vitamins are stored in the liver and
fatty tissues and are eliminated more slowly than water soluble
vitapiins.
When consumed in excess, fat-soluble vitamins pose a great-
er risk for toxicity than water-soluble vitamins. Eating a normal,
well-balanced diet will not lead to toxicity in healthy individuals.
But, taking vitamin supplements that contain mega doses of vita-
mins A, D, E and K may lead to toxicity.
Vita-facts:
‘Small amounts of vitamins A, D, E and K are needed to
maintain good health
‘Food that contain these vitamins will not lose them when
cooked
" ‘The body does not need these every day and stores them in
the liver when not used
‘Most people do not need vitamin supplements
‘Megadoses of vitamins A, D, E and K can be toxic and lead
to health problems
Foods rich in these vitamins are:
‘Vitamin A-animal origin foods are dairy products, fish, liver
and plant origin foods that contain beta-carotene that the body
converts to vitamin A are carrots, pumpkin, winter squash, dark
green leafy vegetables and apricots.
‘Vitamin D-milk and other dairy products fortified with vita-
min D, and oily fish.
‘Vitamin E-vegetable oils and margarine, fruits, nuts, veg-
etables, grains, seeds and fortified cereal.
‘Vitamin K-Green vegetables such as turnip greens, spinach,
cauliflower, cabbage and broccoli.
