Presenting food attractively is
"like looking at a brand new car and
knowing It will be a good drive,"
says Joseph E. Trahan III.
Returning home with ten years'
impressive culinary training and
experience, the 1985 Bridge City

"When people look at a plate of
food, the first thing they do is smell
it. Then, looking at the full picture,
creating a combination of smelling
and seeing, you know it's going to
taste good," he says.
Trahan utilizes color in his food
presentations, with attention to the
season. Summer, for example,
"calls for real bright colors, a
refreshing look. A lot of my dishes
will be light, refreshing and very
colorful, and tasteful," he adds.
The idea of becoming a chef
"clicked in my head" when he was
graduating from high school,
Trahan remembers. "I just picked it
out of the blue; but the more I did it,
the more I liked it."
The career began when his
mother, Amy Uzzle, contacted a
French chef. •/ '.
Trahan worked with that chef in
Houston and Washington, D.C. He
first was involved in creating artistic
presentations; actual cooking came
later. / v

Egg rolling Is a custom in many
countries, symbolizing the
stone which was rolled away
from the tomb of Jesus. The
tradition of eating bunnies
made of cake or candy signifies
our frail human state and our
need of God's protection.
Pretzels, which mean two arms,
are often eaten on Easter and

The Dutch spray eggs with
