Orleans, La. He supervised wedding
receptions and large parties.
Trahan's subsequent move was as
saucier for Louis XVI RestauranvSt;
Louis Hotel In Now Orleans, La. As
such, he prepared all sauces, soups
and slocks. It's important, he says, to
know which sauce goes best with meats
or fish.
His final career step before coming to
Dee's Steak House and Mesquite GriN
was at the Tower Club in Beaumont.
At Dee's, which will be open tor lunch
and dinner Mondays through
Saturdays, Trahan plans to hire
carefully following her "souped up" recipes, like a scientist ruling
over his most Important experiments. Like a scientist, she would
experiment, not always with success. I recall chick pea soup; it
tasted great, but after a couple of hours it left your stomach tied
in knots. She cooked it only once. Most of the time her
investigations into the world of abstract were successful, and my
taste buds were usually the better for them.
Always willing to try anything new, I asked her to cook lasagna
once. She enthusiastically found a recipe, made her changes,
got all the fixings, and together we made the best lasagna I've
ever eaten. It has since become one of our family's favorites,
along with macaroni and cheese, beer battered fried shrimp,
manicotti, cheesecake, beef Stroganoff, chicken and dumplings,
etc., etc., etc. I think you get the picture.
Once she read in a magazine, making a menu of dinners for the
month would help save time and money, create balanced meals,
and take the boredom out of eating and cooking. With both
Mom and Dad working shifts, this was an ideal way to plan meals
around the house. She sat down, carefully planned and created
a monthly menu, put it down on paper, and posted it on the
kitchen bulletin board each month. Of course, as each menu
went up, my friends immediately "checked it out" and decided
when they were coming over for dinner.
During high school I worked at Kentucky Fried Chicken,
McDonalds, Pizza Hut, and the Sonic (twice). Often she
wondered why I took such an interest in cooking. I think maybe I
enjoy eating more than most, or maybe I just enjoyed being in
the kitchen with my Mom.
It's very easy to buy gifts for my mother; just buy her a cook
book (she has thousands), anything to cook with, or take her out
to eat some place she hasn't been before. This year, instead of
those things, I decided to give her something a little different;
that's why I wrote this article. So, Mom, thanks for all the good
cooking over the years, and everything you taught me. Have a
these traditions like decorating eggs and playing egg rolling
games. They also recall a few more traditions. Madge Jackson
reflects, as a child, the family would go over to her grandfather's
house for the Easter meal and egg hunt. Her favorite part of
Easter, though, was getting a brand new Easter dress with
special pastel colors and frills, along with beautiful black patent
leather shoes. This American tradition also symbolizes the
renewing of life through Christ. Carl Duke put on his best duds
as a boy. He always loved the Easter Hunt after church services.
Ola Momeny and Verna Sigler remember the Eater egg dye,
decorating Easter baskets as children and as adults for their
grandchildren. They also recall the new dresses and the Easter
hats, which were always delightful to wear and admire. Sigler,
Momeny, and all laugh as they recall how everyone seems to
show up to church on Easter, even if they aren't regular
attendants.
Easter holds many fond memories for our seniors. A time of
family and tradition. Parents spending the day playing with and
teaching their children. A salute to the memory of the Savior
who sacrificed himself for the sins of mankind. If you are a local
senior, you are welcome to join our Easter Sunday church
services. There are always special things to do on Easter
Sunday with good neighbors at the Orange House.

studied for three years at L'Academie
de Cuisine In Behesda, Maryland. He
spent the first year concentrating on the
basics, such as bread making in a
"Practlque Course for the
Professional." The next year, he
studied "Theory and Technique,"
focusing on reasons why foods are
prepared certain ways and at specific
temperatures. The final year, he

She has been married to Ardian Hebert for the past fourteen
years. They have one daughter, Melissa, a seventh grader at
Bridge City Junior High School. "We stay involved with Melissa
in all her sports; softball, basketball, volleyball and track. Those
are my hobbies, running the roads with her," said Hebert.
Hebert teaches fifth grade Catholic Christian Doctrine. The
family attends St. Helen's Catholic Church in Orangefield. -- -<
