Cheese Enchiladas
Ingredtenta: Com tortillas, two
large cans of Old El Paso enchila-
da sauce, garlic powder, comino,
chili powder, grated cheese (Smith
recommends sharp Cheddar, but
says any of your favorite cheese
will work), cooking oil, onion
(optional)
By taste, add garlic powder,
comino and chili powder to two
large cans of Old El Paso enchila-
da sauce. Let simmer. While mix is
hot, add a handful of grated sharp
Cheddar cheese to melt. Set aside.
While sauce cools, cover bottom of
a skillet with thin layer of cooking
oil and add 1/2 teaspoon of chili
powder. After oil heats, lay com tor-
tillas individually in oil for about a
minute to soften for rolling. Drain
and remove excess oil. In the bot-
tom of a baking dish, pour one
layer of the enchilada sauce mix;
use enough to cover bottom of the
dish. Lay com tortillas opt and add
about 2 tablespoons of grated
cheese to each. Roll tortillas and
line the baking dish with the rolled
tortillas. Pour remaining chili sauce
over tortillas. Top with a layer of
chopped onions and add another
layer of grated cheese. Bake in the
oven at 35OT for 25-30 minutes.

For kids: Always believe in
yourself and stand strong
without violence. No one has
a right to mistreat you
because you are different.
There’s always a way out.
The following are some
easy ways to respond to bully-
ing:
1) Be friends. There’s
enough fighting in this world.
The more friends'we can
make the better. It doesn’t
mean turning into a bully, but
believing in friendship and
believing in you.
2) Get an adult. A teacher,
nurse, parent or police officer
can help you.
3) Embarrass the bully. If it
means getting attention to
save yourself then embarrass
the bully with noise, yelling
and/or crazy behavior.
4) Trick the bully. Tell the
bully you’ll be right back and
take off. It’s not being a
“chicken.” It’s like using
“karate” from your brain. You
shouldn’t fight in school.
Build your mind with self-
defense techniques.
5) Use self-talk. When you
feel you are being picked on,
tell yourself you are not what
the bully says you are. Give
yourself a pep talk like “I’m
good and I’m strong.”
Communities can stand up
against this horrible dilemma
by acknowledging its pres-
ence while upholding the
respectful values that help
schools achieve the absolute
best environment possible.
Role playing and character
development programs such
as Keystone and School
House Respect provide an
excellent augmentation to tra-
ditional curriculums.
Teachers and administrators
have a full plate of issues
amplified on a daily basis.
Together, students;, parents,
teachers and administrators
can achieve the optimal learn-
ing environment for children
if bullying is acknowledged,
measured, and prevented.
