Our Cook of the Times is Kelly
Goodman, a lifetime resident of
Lindale. Kelly is employed at
Lindale National Bank. Her hus-
band Tommy owns his own roof-
ing company.
Children Ryan, Brandon,
Tarran and Justin keep Kelly and
Tommy actively involved.
Kelly is very active in Cub
Scouts where she serves as both
treasurer and den leader.
Reading and family activities
are things Kelly enjoys most.
MEXICAN CORNBREAD
1 cup white com meal
1/2 cup flour
1/2 tsp. salt
1/2 tsp. baking powder
1/2 to 3/4 cup milk
1 egg
1 onion»chopped
3 jalapeno peppers, chopped
1/2 lb. grated Cheddar cheese
1 can cream style com
1/2 lb. ground beef, cooked and
drained
Mix dry ingredients together
and add com and egg. Add milk.
Heat oil in iron skillet and pour
in half of meal mixture.
Add meat, onion, peppers, and
cheese. Top with remaining meal
mixture. Bake at 350 degrees for
1 hour.
FRUIT SALAD
3 to 4 cups frozen fruit (peaches,
strawberries, etc),thawed and
drained
1 banana
1 small can chunk pineapple,
drained
1 small package instant vanilla
pudding

BEAN SALAD
Add to bowl but do not stir:
Green beans
Wax beans
Chopped onion
Carrots
Cauliflower
DRESSING:
1/2 cup sugar
2/3 cup vinegar
EASY HORS D'OEUVRES
Cut circles of bread with a
cookie cutter, spread with mayon-
naise, top with a cucumber slice
and a pimiento sliver or a sprig of
dih.

GREEN RICE
1 cup rice
3/4 stick margarine
1 chopped onion
1 can chopped green chillies,
mild
1 can cream of chicken soup
1 can water
Garlic salt to taste
Mix all ingredients and cook in
electric skillet at 300 degrees for
45 minutes.
SHRIMP DIP
8 oz. cream cheese, softened
1/2 cup mayonnaise
1 can shrimp, diced or broken
1 1/2 Tbsp dry minced onion
1 1/2 Tbsp, lemon juice
Blend cream cheese with may-
onnaise. Add remaining ingredi-
ents. Mix well and refrigerate
several hours before serving.
SAUSAGE & RICE
CASSEROLE
1 lb. sausage, hot or mild
1/2 cup chopped onion
1 small can mushrooms, drained
1 cup uncooked rice
1 1/2 envelopes chicken noodle
soup mix
LEMON SUPREME CAKE
1 box Lemon Supreme cake mix
2 eggs
1 cup apricot nectar
3/4 cup Wesson oil
1/2 cup sugar
Mix all ingredients together.
Bake in a 350 degree oven for 40
to 45 minutes.
ICING:
1 cup powdered sugar
1/2 cup lemon juice
Mix together and pour over
cake while cake is still hot.

Scoop out the pulp from cherry
tomatoes and stuff them with your
favorite tuna-fish salad, deviled
ham, or guacamole.
To make guacamole, mix 2 ripe
avocados, mashed, with 1 table-
spoon lemon juice, 1 teaspoon
minced onion and red pepper
flakes and salt to taste.
