THOROUGH COOKING IM-
PORTANT FOR FRESH HAM
— Although trichinosis is rare
in the United States, many
consumers still wonder about
the safety of ham. According
to Texas A&M University Ag-
ricultural Extension Service
nutrition specialists, there is
no danger of trichinosis in ful-
ly cooked hams. Fresh hams,
however, need thorough cook-
ing until the center reaches a
temperature of 170’ F. To
make sure this temperature is
reached, insert a meat ther-
mometer in the thickest part
of the cut, not touching the
bone or fat.

Representatives of the
Texas State Teachers Associa-
tion last week told members of
the House Education Commit-
tee that teachers in 220 Texas
school districts have no health
insurance.
Jack Kelly, TSTA govern-
mental relations specialist,
said the State of Texas is liter-
ally "gambling" with the
health of these unprotected
teachers by not providing a
minimal state-funded
policy.
“The state provides
era with a minimum
schedule, five days of sick
leave and a retirement pro-
gram that has become a bien-
nial source of revenue to bal-
ance the state budget and
that’s Itl" KeUy told the
lawmakers.
TSTA Is seeking legislation
to establish group health in-
surance for teachers.
The testimony by TSTA fol-
lowed three weeks of intensive
lobbying on the Senate side of
the state legislature for Senate
BUI 525, an omnibus bill which
passed the Senate week before
last.
"We are extremely pleased
that the Senate voted to incor-
porate several TSTA bills into
SB 525 which amends House
Bill 72, the education reform
bill enacted last summer,"
KeUy said.
TSTA was successful in get-
ting the Senators to provide
more funding for the career
laririer and to speed up the im-
enacted and it allows teachers
to appeal arbitrary, capri-
cious and bad faith decisions
regarding their placement
the career ladder.
