sending cards. Plans were made to
prepare Easter remembrances for
residents of an Electra convale-
scent home.
Sweaters for World Relief are
being gathered by the LWML for
men, women and children; these
can be new or used but should be
practical rather than decorative
only.
Mrs. Castens voiced the closing
prayer.
The next meeting will be on
Monday, April 18 at 9:00 in the
Parish Hall and visitors are’
welcome.

Mrs. Zoch presided for the
business meeting with Mrs.
Schumann, secretary, reading the
minutes and correspondence re-
garding Red River Zone activity.
Mrs. Lyle Eaton, Zone secretary,
summarized the leadership train-
ing meeting held in January and
reminded the group that the
Christian Growth Workshop will
begin at 9:30 Thursday, April 14 in
Our Redeemer Lutheran Church in
Wichita Falls. A letter from the
long range advisory committee
"A Cry- of Hope”, a/study -of
prayer as.recorded in Luke found
in .the Spring, Lutheran Woman’s
Quarterly was presented by Mrs.
Elton Zoch when the Berean
Lutheran Women’s Missionary
League met in the Parish Hall of
Immanuel Lutheran Church near
Harrold. The study was begun
with singing of the hymn, “What a
Friend We Have in Jesus”.

Mrs. Clarence Freeling, Mrs.

Cook sweet potatoes; drain and
mash with a fork. Add oleo, sugar,
eggs and vanilla. Cook on burner
or in microwave until hot. Place in
a baking dish. Top with marshmel-
lows. Bake in a 350 degree oven
until marshmellows are browned.
FROZEN FRUIT SALAD
5 bananas, mashed-covered with:
2T. lemon juice
1 cup sugar
1 large can crushed pineapple
1 cup frozen strawberries
1 cup nuts
1 pint sour cream
1 large cool whip
Mix-put in container and freeze.
OVEN FRIED CHICKEN
Cut up one 2‘Zi to 3 lb. ready-to-
cook broiler-fryer chicken. Dip
pieces in '/a cup melted butter; roll
in mixture of 2 cups crushed
potato chips, (or crushed corn-
flakes, or 3 cups crisp rice cereal,
crushed) */< tsp. garlic salt, and
dash pepper. Place pieces skin
side up, not touching, in greased
large shallow baking pan. Sprinkle
with remaining butter and
crumbs. Bake at 375 degrees for 1
hour or till done. Do not turn.
CHICKEN SOUFFLE
Layer:
4 slices bread and crust, cubed
2'/} cups cooked chicken, cubed
‘/i cup mayonnaise
1 cup chopped celery
'A cup green pepper, chopped
1 small onion, finely chopped
Top with thin slices of bread
without crusts. Beat 4 eggs with 3
cups milk. Pour over entire top.
Put in refrigerator overnight.
When ready to bake, heat oven to
350. Put souffle in for 15 minutes.
Remove and add 1 can of cream of
mushroom soup slightly beaten.
Pour over top carefiilly and
sprinkle with Vi cup grated
cheese. Bake 1 hour at 350.

Meanwhile, beat eggs til foamy.
Add sugar, beat until thick and
blended. Add lemon juice, V> cup
flour and baking powder, J»at

25-30 min. until golden and
custard is set. Remove from
oven-sprinkle with powdered
sugar. Cool. Cut into small
squares.
TANGY LEMON SQUARES
1 cup oleo softened
dash salt
Vi cup powdered sugar, unsifted
2Vt cup flour, unsifted
4 eggs
2 cups granulated sugar
6 tblsp. lemon juice
1 tsp. baking powder
In large bowl, cream oleo and Vi
cup powdered sugar until fluffy.

A new life in a new place has
been a challenge for our Cook of
the Week, Kathy Hanks.
Daughter of Mr. and Mrs.
Charles Russell, Kathy grew up in
Arlington. She attended two years
of college at East Texas State
University before moving to Pales-
tine where she spent four years.
There she attended Nursing Scho-
ol for a year and became an LVN.
She moved back to Arlington for a
short while before marrying Gary
Hanks of Electra. Kathy and Gary
had known each other for years.
She used to visit relatives in
Electra as a child and Gary lived
down the street. When they met
again years later they married and
although Kathy said she never
thought she would live in Electra,
she moved here to settle with Gary
and his two sons, Chris and
Shawn.
Kathy’s most recent change was
starting a new job as office
manager for the Electra Nursing
Center Home Health Service. This
agency is a division of Beverly
Enterprises with offices located at
the Electra Nursing Center. Her
nursing experience and six years
of corporate bookkeeping exper-
ience have been very necessary in
helping to start this new office.
When not working, the Hank’s
enjov camping out and Gary
usually does the cooking on these
occasions. Kathy loves to fish and
enjov s her horses. She also does
ceramics and many of the items
she has made enhances their
lovely home.
With Kathy’s nursing back-
giound. nutrition is very important
to her and it shows with her
cooking Each meal is carefully
planned to provide a balance diet
for her family. She rarely fries
food but cooks a lot of chicken
dishes and casseroles as well as
vegetables, in which she leaves
the skins She also uses lowfat
products and condensed milk in
her cooking. Kathy is very particu-
lar about the boy’s eating habits.
She often makes vegetable dips
and the family snacks on fresh
vegetables and dip instead of
sweets or chips They also eat a lot
of fruit, chew sugar-less gum and
eat little or no candy. The Hank’s
enjov cooking out during the
warmer months and when it’s cold
thev oftm fix meals such as hobo
dinners over the fire in the
fireplace Gary is very active with
scouts and enjoys teaching the
bovs
Moving from the city to a small
town, starting a new family life as
well as a new job has made the last
year quite a challenge for Kathy.
Although she has adjusted well
she noted the best thing that 'has
happened in their family life was
finally finding a church home.
Kathy plans to become more
involved in their church and more
than anything desires to be an
influence on her family, friends
and her community.
