4 medium to large sweet potatoes
J stick margarine
2 c. sugar
2 eggs
J small can condensed milk
4 c. ribbon cane or other syrup
3 t. nutmeg
2 9-in. unbaked pie shells
Boil potatoes until tender. Peel and mash. Add remaining
ingredients and beat with an electric mixer until very smooth.
Ftour into pie shells. Bake at 350 degrees for 60 minutes.

Combine sugar, peanuts, and syrup in a 2-quart microwave-safe
bowl. Cook on high power for 8 minutes. Stir in margarine and
vanilla and microwave for 1 additional minute. Add baking soda
and stir, then pour quickly onto a greased cookie sheet. Spread
in a very thin layer. Let cool completely, then break into pieces
and store in an airtight container. (Do not attempt to make this
candy when the weather is damp.)
Thanks to Kerry Dudley, local R.N. and advocate of healthy,
low-fat recipes, was kind enough to share an American
Heart Association’s recipe for enchiladas that has been
modified to reduce the calories and fats:
Cheese Enchiladas ( Before Modification )
(12 Enchiladas)
Use oil to fry tortillas in skillet.. Drain tortillas. Mix ingredients
for sauce, may add water if desired. Simmer. When sauce ready,
dip tortillas in sauce. When tortilla is coated on both sides with
sauce, remove from sauce and drain. Add cheese and onions and
roll tortilla. Repeat procedure until all enchiladas are prepared.
Place enchiladas in casserole dish and add remaining sauce and
extra shredded cheese on top as desired. Place in 35Q degree oven
for 10-15 minutes or until cheese melts. Place one tablespoon of
sour cream on top of enchiladas, as desired.

1 8-oz. can crushed pineapple, drained

'Cream together butter, sugar, eggs, and vanilla. Stir in bananas
and pineapple. Add flour, baking soda, and salt and mix just until
moistened. Stir in nuts. Pour batter into two greased and floured
loaf pans. Bake at 325 degrees for 1 hour.

16 to 24 dove breasts, boned or unboned
1/4 lb. butter
1/2 c. oil
• 1 medium white or yellow onion, diced
:2 cloves garlic, crushed
1 can beef broth
1 can Campbell’s French Onion soup
1 c. sliced green onions, with tops
2 bell peppers, cut into strips
1 4-oz. can mushrooms
2 T. cornstarch
1/3 c. soy sauce mixed with 1/3 c. water
1 can peeled tomatoes, drained and quartered
Soak dove in vinegar and water overnight or use fresh. In a very
; large skillet, brown dove and onion in butter and oil. Add garlic,
; broth, and soup; cover and let simmer for 30 minutes. Stir in
green anions, bell peppers, and mushrooms; cover and cook 5
minutes more. Blend cornstarch, soy sauce, and water, then stir
■into skillet mixture. Cook, stirring, about 2 minutes or until clear
and thickened. Add tomatoes, stirring gently until tomatoes are
coated with sauce. Serves 6 to 8. (

TU Electric
Announces Plan For
High Bill Relief
Because of August's unusu-
ally hot weather, TU Electric
announced today a plan to of-
fer residential customers some
relief from the resulting high
electric bills.
The plan will allow cus-
tomers who may have diffi-
culty paying the full amount
of this month’s bill to pay as
little as half of it now, and pay
the remainder with October’s
bill payment, when electric use
should be lower. No interest
will be charged on the deferred
portion.
“The weather in August has
been hotter than normal, and
many of our customers have
been using more electricity
than usual to keep cool,” said
TU Electric Chairman Erie
Nye, noting that this area has
just experienced the longest
stretch of temperatures of 100 :
degrees or more since the ■;
record- breaking summer of ; >
The extremely hot weather :
has increased electricity use
by some customers by well
over 50 percent compared
to last August. In addition,
TU Electric implemented a
rate increase, under bond and
subject to refund, on August
3.
“We realize that the ex-
tremely hot weather this Au-
gust caused increases in con-
sumption for which our cus-
tomers were unprepared, and
we want to do what we can to
help” Nye said.'
Information on how to take
advantage of the plan will be
inserted into residential cus-
tomers’ bills, starting today.
Customers can simply pay at
least one-half be deferred auto-
matically until the date their
_ . ; is due.
The deferred portion will be
itemized on the October bill.
Customers who wish to partic-
ipate do not have to defer a
foil one-half of their bills. They
may defer any amount up to a
maximum of one-half.
Although there is no need
to call to participate, a toll-
free number - 1-800- 390-0543
- is available to customers who
have questions about the plan.
The company made a similar
offer to customers during the
summer of 1980. This August
has been the hottest since that
year of record-breaking heat.
